Abstract
Invenţia se referă la un acidulant alimentar natural, şi la un procedeu pentru obţinerea acestuia. Acidulantul conform invenţiei este un lichid limpede, de culoare brună, având o densitate de minimum 1,0500 g/l, o aciditate totală de minimum 70 g/l în acid tartric, un conţinut de acizi volatili de maximum 4 g/l în acid acetic, un conţinut de fier de maximum 5 g/l, lipsit de cupru, potasiu, calciu şi alţi cationi. Procedeul conform invenţiei constă în colectarea şarjelor de vinasă, tratamentul antimicrobian şi antioxidant cu 300...400 mg/l metabisulfit de potasiu în 2...3 reprize, tratament cu 5 g/hl derivaţi naturali din pereţi celulari de drojdii autolizate, degradaţi termoenzimatic, limpezire şi stabilizare proteică prin bentonizare, stabilizare complexă simultană, prin schimb ionic cu răşină H-cationitică, concentrarea prin osmoză inversă şi conservarea stabilităţii vinasei concentrate, prin tratament cu gumă arabică microgranulată, de înaltă puritate, în doze de 30...50 g/hl, asociat cu omogenizare energică, menţinerea în repaus timp de 5...10 zile, cu omogenizări zilnice, filtrare, afinare dinamică, urmată de controlul senzorial şi fizico-chimic al produsului final.
