This invention can transform aquatic products, such as fish, into a boneless state without compromising the original texture and flavor. Under reduced pressure, heating, drying of aquatic products in an airtight container under applied pressure, aging of aquatic products at chilled storage temperatures, and aging of frozen aquatic products are all processes performed. The resulting processed products can then be directly subjected to secondary processing such as boiling, baking, grilling, and frying. This invention can transform aquatic products, such as fish, into a boneless state without compromising the original texture and flavor of the aquatic product.
