Abstract
Agirlik itibariyla %27'den az yag içeren, yagi azaltilmis sütlü bir çikolatanin elde edilmesine iliskin; büyük ölçüde yagsiz malzemelerden olusan toz halindeki önceden hazirlanmis bir karisimin olusturulmasi, %96 oraninda yag içeren malzemelerin toz halindeki önceden hazirlanmis bu karisima eklenmesi ve kütlenin toplam agirligi itibariyla %18 ile %24 oraninda yag içeren bir kütlenin elde edilmesi amaciyla karistirilmasi, 25 mikron ile 35 mikron arasinda bir tanecik boyutunun elde edilmesi amaciyla bu kütlenin aritma haddesi araciligiyla tasfiye edilmesi, bu karisima yag içeren malzemelerden geri kalan maddelerin ve lesitinin eklenmesi, ortaya çikan karisimin yogurulup hamur seklinin verilmesi ve koyu kivama getirilmesi asamalarindan olusan, yagi azaltilmis sütlü bir çikolatanin hazirlanmasina iliskin bir islem.
