Abstract

Zerzevat, örnegin, meyveler ve sebzeler ve yenebilir hayvan proteinleri gibi gida maddelerinin muamele edilmesi için toksikolojik açidan kabul edilebilir katki maddeleri kullanilarak bazik temizleyici bilesimler temin edilmistir. Lezzete etki etmeyen, potasyum alkil sülfat gibi anyonik ve/veya noniyonik deterjan sürfaktanini, en azindan 0.04 molarite kadar katyonu temin etmek üzere elektroliti ve en azindan 8.5 bir pH'i temin etmek üzere bazik tampon maddesini içeren sivi formülasyonlar, tüketimden hemen önce gida ürünlerine uygulanmakta ve mikroorganizma kirlnmesini bir dakikadan daha düsük bir sürede önemli ölçüde düsürebilmektadir. Gida maddeleri durulama olmadan tüketilebilmektedir.
