Abstract

On peut obtenir directement et efficacement un alcool à partir d'amidon par fermentation lorsqu'on intègre dans une levure, un plasmide qui est construit de manière à comporter de la glucoamylase sur la couche de surface et de l'alpha-amylase secrète, et qu'on laisse ensuite croître la levure résultante avec un substrat à base d'amidon. Comparativement à une levure présentant de la glucoamylase et de l'alpha-amylase sur la couche de surface de la cellule, une levure présentant de l'alpha-amylase sur la couche de surface de la cellule et sécrétant de la glucoamylase ou une levure présentant de la glucoamylase sur la couche de surface, la levure précédemment décrite présente une excellente capacité de fermentation alcoolique et présente un rendement alcoolique de 40 %, c'est-à-dire, comparable à la fermentation alcoolique à partir de glucose. L'utilisation d'alpha-amylase provenant de Streptococcus bovis permet de produire de l'éthanol directement à partir d'amidon non cuit (amidon natif).
