Abstract

L'invention concerne un procédé de production d'une poudre instantanée soluble séchée par pulvérisation destinée à la production de boissons. Ce procédé consiste à : produire une solution comprenant de l'eau, un agent de formation de matrice soluble dans l'eau et un émulsifiant et/ou un stabilisateur d'émulsion soluble dans l'eau ; produire une émulsion huile dans eau par combinaison du mélange obtenu avec au moins une substance émulsifiable dans une solution aqueuse, cette substance étant choisie dans le groupe comprenant les huiles éthérées, les terpènes, les huiles sensoriellement neutres, les huiles végétales et des mélanges de ces substances, et une charge pigmentaire ; homogénéiser l'émulsion huile dans eau ; sécher par pulvérisation l'émulsion huile dans eau homogénéisée pour produire une poudre présentant une grosseur de grain moyenne comprise entre 80 et 250 mu m.
