背景技術
[0002] 従来から、ビールテイスト飲料など発酵飲料において、発酵原料として未発芽穀物 を 100%使用して醸造する試みがしばしば行われている。し力しそのような原料は従 来のビールや発泡酒の発酵原料と異なっており、麦芽を用いないので麦芽に内在す る酵素(例えばアミラーゼ類やプロテアーゼ類)が含まれておらず、外部からのァミラ 一ゼ類ゃプロテアーゼ類の酵素を組み合わせて作用させる必要があった。
[0003] 例えば、飲食品の原料として多用されている材料であるコーンは、発芽させたとして も、麦を発芽させた麦芽に比べると、求める品質を満足させるような酵素は生成し難 レ、。
[0004] そこで、コーンを発酵飲料の原料として用いるには、デンプンを外部酵素で分解( 糖化)し易くするために、糖ィ匕工程の前に液化しておく必要がある。しかし、この液化 時の加熱温度は 90〜105°Cで、その後使用する外部酵素(例えばアミラーゼ類ゃプ 口テアーゼ類)の至適温度範囲を超える場合が多ぐそのままでは従来のビールや 発泡酒の仕込み同様に糖ィ匕することが出来ない。これを解決するために、仕込みに おいて未発芽コーン原料を水と液化酵素とで加熱液化した後に、一旦冷水又はクー ラーで、外部酵素(例えばアミラーゼ類やプロテアーゼ類)の至適温度まで冷却して 糖化液を得ている。この冷却操作は、未発芽コーン原料と水の熱量と仕込み装置の 容量との兼ね合いで、 目的とする温度まで冷却することが非常に困難を伴う上に、上 記の方法で製造した糖化液は、外部酵素の反応が充分に働かず、発酵工程での酵 母の栄養源である糖類やアミノ酸類が発酵に必要な目的の量に達しない場合も生じ る (Enzyme Process Division Bioindustnal Group Novo Nordisk社カタログ、題名 U-Brew ( Brewing with up to 100% unmalted grain and enzymes) . 1991. June.)。 [0005] そのような場合は、発酵不良になり未熟成香や残糖が多く残り、キレの悪い製品に なり、ビールテイスト飲料の香味 ·品質特性に致命的であった。
[0006] さらに、コーンはそのまま外部酵素での分解を施して発酵原料とする場合、特にタ ンパクの分解も困難であった。従って、コーンが発酵飲料、特にビールテイスト飲料 の原料として好適に用いられることは無かった。
発明の開示
[0007] 本発明は、飲食品の原料として多用されている入手容易な材料である非麦穀物、 例えば未発芽のコーンを原料として、発酵不良を生じることなぐ高品質の発酵飲料 、特にビールテイスト飲料を得る技術を提供する。
[0008] かかる課題を解決するために、本発明者らは非麦穀物(例えばコーン、好ましくは 未発芽コーンなど)を各成分に分画してから発酵原料に用いることに着想した。すな わち、原料の非麦穀物から、少なくともデンプン画分とタンパク質画分を分画し、両面 分をそれぞれ外部酵素で処理して、糖化スターチおよびタンパク分解物としてから、 発酵工程の仕込み液の原料として用いれば、仕込み工程での不具合が解消するこ とを見出した。さらに、こうして別個に調製した糖化スターチとタンパク分解物の混合 比率を詳細に検討し、発酵工程での発酵不良の生じない好ましい混合割合を設定し
、本発明を完成させるに至った。
発明を実施するための最良の形態
[0009] 非麦穀物
本発明においては麦以外の各種穀物を分画して用いることができる。非麦穀物の 例は、コーン、米、そば、ソルガム、粟、ひえ、および大豆やエンドゥといった豆類であ る。なお、麦については、本発明の技術を用いなくとも、発芽 '仕込み'発酵工程が容 易に進行するため、本発明の対象としない。
[0010] 非麦穀物のうち、コーンは、タンパクの構成アミノ酸中に、ロイシンを非常に豊富に 含むことがわかっている。ロイシンは発酵飲料、特にビールテイスト飲料の良好な香 味の前駆体であることから、コーンを好適に用いることができる。コーンは麦芽同様に 発芽させて用いようとしても、発酵工程での発酵不良の問題を伴うが、本発明にした 力^、、成分を分画してから用いると発酵不良の問題が解消される。コーンは発芽コー ン、未発芽コーンのいずれも本発明に使用できるが、未発芽のコーンの使用が好適 である。
[0011] コーンの種類はデントコーン、フリントコーン、ポップコーン、ヮキシ一コーン等特に 限定されない。このうち、デントコーンがビールテイスト飲料の原料として適している。 コーンは、粒状コーンを粉砕して用いてもよいし、デンプンゃペプチドが未分画であ れば、コーングリッツやコーンフラワーといった加工品を出発原料として用いても良い
[0012] 非 穀物の成分の分画
本発明においては麦以外の各種穀物、例えばコーンを各成分に分画してから発酵 原料とする。分画により、少なくともデンプン画分およびタンパク画分に分画する。分 画方法に特別の制限はなレ、が、例えば、以下の工程で行うことができる。
[0013] コーンを浸漬水に浸漬する(浸漬温度はほぼ室温、浸漬時間は 48時間程度である );吸水したコーンを粉砕する(好ましい粉碎機としては、ディスクミルである);粉砕後 、水面に浮かんだ胚芽を分離する;胚芽を分離した粉砕コーンを磨砕する(好ましレヽ 磨碎機はディスクミルである);磨砕後のコーンを篩に通し、篩上に残った繊維画分を 分離する(好ましい篩は 50〜 100 / m程度である);比重の違いに基づいて、例えば 懸濁液からの沈降速度などで、デンプン画分とタンパク画分とを分離回収する。ある いはこれを、遠心分離で分離しても良い。
[0014] デンプン画分の酵素分解
デンプン画分の糖化は、醸造用糖化液の調製のための公知の方法で行うことがで きる。例えば、外部酵素として液化酵素(アミラーゼ)を用レ、、スターチ分解物(コーン 糖化スターチ)を調製することができる。液化酵素の種類、使用量、酵素反応温度、 酵素反応時間は、製造すべき発酵飲料に応じて適宜決定できるが、ビールテイスト 飲料の製造を目的とする場合で例示すると例えば、以下のとおりである。
[0015] pHを水酸化カルシウムを使レ、 pH6に調整し、耐熱ひアミラーゼ(ターマミル 120L :
Novozymes A/S)を適量(0.025〜0.5%)添加し、よく混合し攪拌しながら 103°Cで 5 分間加熱を行う。温度を 95°Cに下げ、 90分間保持する。温度を 65°Cに下げ /3ァミラ ーゼ'プルラナーゼ酵素として、ピオザィム M5 (アマノエンザィム社)やライスターゼ P L (大和化成社)を 0.01〜0.1%添カ卩して、約 20時間攪拌する。それを 80°C以上ま で昇温を行い酵素類を失活させる。この糖液を珪藻土で濾過し、イオン交換樹脂を 通して脱塩を行い、活性炭で脱色 '脱臭し、デンプン分解物 (コーン糖ィ匕スターチ)液 を得ることができる。分解が酵母発酵に適する程度に達成されたか否かは資化性糖 を HPLCで測定することにより調べることカできる。
[0016] 得られたデンプン分解物(コーン糖ィ匕スターチと称することもある)の溶液は、そのま までまたは適宜濃縮もしくは希釈して用いることもできるが、本実施例では、微生物的 に安定な程度、例えば固形分 75%まで減圧濃縮することが好ましレ、。
[0017] タンパク画分の酵素分解
タンパク画分の分解は、発酵段階で酵母が利用するアミノ酸やペプチドといったタ ンパク分解物を得るために行う。分解のために使用可能な酵素および酵素反応方法 は一般に公知であり、例えば以下の方法で分解することができる。
[0018] タンパク画分を固形分で 30%になるように温水に懸濁し、殺菌のため 95°Cに昇温 し 20分間保持する。温度を 50°Cに下げ、水酸化ナトリウムと塩酸で中性になるよう p Hを調整し、フレーバーザィム(Novozymes A/S)やプロチン FA (大和化成社)といつ たプロテアーゼを 0.1〜1.0%程度添加し 20時間反応させる。分解度は遊離アミノ酸 力 20%以上になるのを目処とし、酵素失活のため 95°Cに昇温し 20分間保持する。 この反応液を、珪藻土で濾過し、活性炭で脱色'脱臭を行いコーン蛋白分解液を得 た。酵母発酵に適するまで分解されたか否かは HPLCにより調べることができる。
[0019] 得られたコーン蛋白分解液は、そのままでまたは適宜濃縮もしくは希釈して用いる こともできるが、固形分 30%まで減圧濃縮し、 105°Cにて 5〜: 10秒間スプレードライ してコーン蛋白分解物の粉末としても良い。
[0020] 繊維画分の高温高圧処理
繊維画分は、高温高圧の流体 (例えば、飽和水蒸気や、水など)で処理することで 、ビールテイスト飲料用の着味着香原料として好適に用いることができる。高温高圧 処理時の流体の温度は約 170°C〜200°Cであれば特に限定されない。前記温度範 囲のうち、 180°C〜200°Cであるのが好ましレ、。処理温度が 170°C未満であるとコク や刺激感の付与に寄与する成分の増大効果が少なぐまた、 200°Cより高い場合、 バニリンの生成量が急激に増大し、バニラ香が強くなり、香味の設計によっては発酵 飲料の原料としては適さなくなる場合がある。
[0021] また、この高温高圧処理は、繊維画分にコーングリッツなど他のコーン由来成分を 混ぜて行ってもよレ、。高温高圧処理は低酸素濃度下で行うことが望ましい。
[0022] 発酵飲料の原料中、高温高圧処理したコーンの繊維画分の添加量は、良好な香 味の発酵飲料が得られる範囲であれば、特に限定されないが、例えば、水を除く原 料当たり、 0.01〜 1 %程度添加することができる。
[0023] 発酵飲料
本発明の発酵飲料は酵母による発酵工程を経て製造される飲料を全て包含する。 例えば、発泡酒、ビール、低アルコール発酵飲料 (例えばアルコール分 1 %未満の 発酵飲料)、雑酒、リキュール類、スピリッツ類が挙げられる。そのなかでもビールティ スト飲料とは、炭素源、窒素源、ホップ類などを原料とし、酵母で発酵させた飲料であ つて、ビールのような風味を有するものをいう。ビールテイスト飲料としては、例えば、 雑酒、リキュール類、スピリッツ類、低アルコール発酵飲料(例えばアルコール分 1 % 未満の非麦芽発酵飲料)などが挙げられる。
[0024] 中でも本発明は、麦芽および大麦は全くまたは僅力 力使用しない発酵飲料に好 適に用いることができる。その場合、米、とうもろこしなどの穀物類を糖ィ匕して得た糖 液や、糖類そのものから得た糖液などに、酵母を添加し発酵させる工程を経るが、窒 素源としては、麦芽以外の植物由来のタンパク質もしくはその加水分解物を利用する
[0025] 本発明の発酵飲料のアルコール分は特に限定されなレ、が、 1〜: 15% (v/v)である ことが望ましレ、。特にビールや発泡酒とレ、つた麦芽発酵飲料として消費者に好んで 飲用されるアルコールと同程度の濃度、すなわち、 3〜8% (v/v)の範囲であることが 望ましい。
[0026] 発酵飲料の製造
本発明においては、発酵飲料の原料として、コーンを分画してカ卩ェしたデンプン分 解物およびタンパク分解物を用いて、場合によりホップ類をカ卩えて混合し、混合液を 煮沸し、固液分離した清澄な発酵原液に酵母を添加し酵母発酵を行う。なお、固液 分離は発酵後にも或いは発酵後にのみ行ってもよい。
[0027] より詳細に説明すると、発酵飲料の製造のために下記の成分を用意して混合する:
(1)スターチ分解物の使用量は、水とホップ (使用される場合)を除く原料当たり、 0.1 〜99%程度使用することができる。スターチ分解物は、前述の方法でコーンを酵素 処理して得たものが好ましいが、コーンを原料とする市販の糖ィ匕スターチや水飴など を用いても良い。
(2)一方、タンパク分解物の使用量は、水とホップ (使用される場合)を除く原料当たり 、 0.1〜50%程度使用することができる。タンパク分解物は前述の方法でコーンから分 画して外来酵素で分解して得たものが好ましいが、市販のコーンタンパク分解物(コ ーンペプチド)などを用いても良い。
[0028] また、発酵のための糖源として麦芽など多量の酵素を有する原料を用いない本発 明の好ましい態様の場合、例えば、水とホップ (使用される場合)を除く原料当たり、 9 5〜99.9%のスターチ分解物と、 0.1〜5%のタンパク分解物を配合すると、発酵工程 における発酵不良の回避や、得られる発酵飲料の優れた香味の面で好ましい。
(3)ホップの使用は、ビールテイスト飲料、発泡酒、リキュール類、スピリッツ類を含む ビール等の製造の場合においては、ビール様の風味を与えるために必要である。ホ ップはビール等の製造に使用する通常のペレットホップ、粉末ホップ、ホップエキスを 香味に応じて適宜選択使用する。さらに、イソ化ホップ、へキサホップ、テトラホップな どのホップ力卩ェ品を用いることもできる。その使用量は、糖液 1L当たり 0.1〜10gまで である。
(4)また所望成分として、非麦穀物の分画の途中で分離されたデンプン画分とタンパ ク画分以外の画分を、所望により適宜カ卩ェして用いることができる。この中でも、繊維 画分は、例えば 170°Cから 200°C程度の高温高圧水蒸気で処理することで、ビールテ ィスト飲料用の着味着香原料として好適に用いることができる。その添加量は水とホ ップ (使用される場合)を除く原料当たり、 0.01〜1%程度が好ましい。
(5)発酵原料には、また、必要に応じ、酵母エキス、イーストフードなどの発酵助剤、 その他の糖源、窒素源、さらに難消化性デキストリン、ポリデキストロース、水溶性トウ モロコシ繊維などの水溶性食物繊維などを添加剤することができる。 [0029] 上記成分 (1)および (2)、および必要に応じて (3)、(4)および (5)の一部または全部を 混合し、水に分散して、約 100°Cに加熱滅菌し、必要なら上清を分離して発酵原液と する。
[0030] 発酵飲料の製造に使用する酵母は、製造すべき発酵飲料の種類、 目的とする香味 や発酵条件などを考慮して自由に選択できる。例えば Weihenst印 han-34株など、巿 販のビール酵母を用いることができる。
[0031] 発酵飲料の製造における発酵時間、発酵温度は、製造すべき発酵飲料の種類、 目的とする香味や発酵条件などを考慮して自由に選択できる。例えば、ビールテイス ト飲料の製造においては、発酵温度を 13°Cに設定して、所定のアルコール濃度を得 るまで発酵を行う。
[0032] 発酵後の混合物は、そのままで発酵飲料としてもよぐ濾過、加熱等の滅菌を行つ て発酵飲料としてもよい。発酵飲料には、カラメルやカラーモルトエキスなどの着色剤 を添加してもよい。
[0033] 低糖晳または低カロリ一発酵飲料
本発明の発酵飲料の好ましい態様の一つは、低糖質発酵飲料である。
[0034] 本発明の方法を用いて得られる発酵飲料は、そのまま飲用することができるが、糖 質やカロリーをできるだけ摂取せずに楽しむことが可能な発酵飲料を製造するため に、これを希釈して、低糖質ビールテイスト発酵飲料を製造することができる。それは 、本発明で発酵原料中に使用する非麦穀物、特にコーンのタンパク分解物はイソ口 イシンを豊富に含有し、醸造中に酢酸イソァミルが豊富に生成するためである。特に 、酢酸イソァミルが発酵物上清中に、 2.0ppmを超え且つ lO.Oppm未満まで含まれるよ うに条件を設定して発酵を行うと、得られた発酵飲料を 5〜8倍に希釈しても、香味の 優れた発酵飲料となることが判明した (特願 2005-157921)。希釈は水により行うが、こ のとき低糖質発酵飲料に不足する呈味物質を補うため、酸味料、甘味料、苦味料、 水溶性食物繊維、アルコールを一緒に添加してもよぐあるいは呈味物質の補足は、 希釈操作後に別途行うこともできる (特願 2005-157921)。
[0035] 糖質の低下は希釈による方法の代わりに、または希釈による方法と組み合わせて、 炭素源として酵母が資化しゃすい 3糖類、 2糖類および単糖類の比率を高めた (例え ば全炭素源の 80%以上にした)、発酵原料を用いることで行うことも可能である。
[0036] 低糖質とは、発酵飲料中の糖質濃度が、固形分換算で 0.8重量%、特に 0.5重量% 未満であることを意味する。低糖質であることが好ましい発酵飲料には、清酒、ワイン 、ビール、発泡酒、リキュール類、スピリッツ類、雑酒、ビールテイスト発酵飲料などが 含まれる。特に発泡酒、ビールテイスト発酵飲料が好まし 特にビールテイスト発酵 飲料が好ましい。
[0037] また、本発明の別の好適な飲料の例として、低カロリー飲料、特にビールテイストの 低カロリー発酵飲料が挙げられる。低カロリー飲料は、カロリーが 20kcal/100ml未満 の飲料で、低糖質および/または低アルコールとすることによって実現することができ る。
[0038] 低糖質または低カロリーのビールテイスト飲料は、香り付与が課題であることが多い 。本発明の技術は、非穀物タンパク質画分を発酵原料の窒素源として用いるため、 十分な発酵により良好な発酵香を与えるものであることから、低糖質または低カロリー のビールテイスト飲料の製造に際し、本発明の技術を好適に用いることができる。
以下に実施により本発明をさらに説明するが、本発明は実施例に限定されるもので はない。
[0039] 実施例 1 コーン成分分画品の調製
精選したコーンを軽く水洗後、 SOとして 2000ppm含有する亜硫酸水に 48時間浸

漬した。浸漬後、コーンを水洗し適度に水をカ卩えてディスクミル又はコーヒーミルで粉 砕した。浮上してきた胚芽部分は除去した。残りの部分を良く磨り潰し、内容物を水 中に懸濁させた。これを濾布で濾過し繊維部分と懸濁部分に分けた。残存する繊維 部分を採り水分 10%以下になるまで 120°Cの熱風で乾燥した。これをコーン繊維画 分とした。
[0040] 濾液である懸濁液は時間がたっと沈殿したので、上清を新しレ、水と交換して沈殿を 洗浄した(2回行った)。洗浄済みの沈殿を薄いプレートに載せ、新しい水と共に揺す りながら展開した。この時広がった沈殿の原点から先端までの間の距離の内 1/2以 内の物をデンプン画分とし、それより先に展開した物を蛋白画分とした。 [0041] デンプン画分は、固形分の含有比率が 30%になるように加水し調製した。
[0042] タンパク画分は、水分が 15%以下になるまで 90〜: 100°Cの熱風乾燥した。
[0043] 実施例 2 デンプン分解物(コーン糖化スターチ)の製造
実施例 1で得たデンプン画分の pHを水酸化カルシウムを使レ、pH6に調整し、耐熱 αアミラーゼ(ターマミノレ 120L: Novozymes A/S)を適量(0.1 %)添加し、よく混合し 攪拌しながら 103°Cで 5分間加熱を行った。温度を 95°Cに下げ、 90分間保持した。 温度を 65。Cに下げ j3アミラーゼ 'プルラナーゼ酵素として、ビォザィム M5 (アマノエ ンザィム社)を 0.1%、及びクライスターゼ PL (大和化成社)を 0.1%添加、約 20時間 攪拌した。それを 80°C以上まで昇温を行い酵素類を失活させた。この糖液を珪藻土 で濾過し、イオン交換樹脂を通して脱塩を行い、活性炭で脱色 ·脱臭し、コーン糖ィ匕 スターチ液を得た。
[0044] 得られたコーン糖化スターチの懸濁液は、そのままでまたは適宜濃縮もしくは希釈 して用いることもできる。本実施例では、微生物的に安定な固形分 75%まで減圧濃 縮した。
[0045] 実施例 3 コーン蛋白分解物の製造
実施例 1で得たタンパク画分を固形分で 30%になるように温水に懸濁し、殺菌のた め 95°Cに昇温し 20分間保持した。温度を 50°Cに下げ、水酸化ナトリウムと塩酸で中 十生になるよう pHを調整した。フレーバーザィム(Novozymes A/S)およびプロチン FA ( 大和化成社)を各 0.5%程加を添加し 20時間反応させ、分解度は遊離アミノ酸が 20 %以上になるのを目処にした。酵素失活のため 95°Cに昇温し 20分間保持した。この 反応液を、珪藻土で濾過し、活性炭で脱色'脱臭を行いコーン蛋白分解液を得た。
[0046] 得られたコーン蛋白分解液は、そのままでまたは適宜濃縮もしくは希釈して用いる こともできるが、本実施例では、固形分 30%まで減圧濃縮し、 105°Cにて 5〜: 10秒間 スプレードライしてコーン蛋白分解物の粉末とした。
[0047] 実施例 4 繊維画分の高温高圧処理物の製造
実施例 1で得られた繊維画分を、高温湿熱処理試験装置 (株式会社日阪製作所製 : HTS— 25/140— 8039)、高圧蒸気ボイラ(三浦工業株式会社製: FH— 100)を 用レ、た。 SUS316合金製 12Lのノくスケット【こ 2kgを入れ、 SUS316合金製耐熱耐圧 容器(30L)内にて密閉した。脱酸素装置(三浦工業株式会社製: DOR— 1000P) により除酸素した水(酸素濃度 0. 3 μ g/ml)を用いて発生させた高温高圧飽和蒸 気(2. 7MPa、 230°C)を約 1秒間送り込むことにより容器内の空気を置換した。つい で、温度条件を 190°C、 0. 9MPaとして、処理時間を 60秒として高温高圧処理を行 つた。いずれも、脱気後、反応容器を真空にして 30分間保持し、真空乾燥を行って 繊維画分の高温高圧処理物を得た。
[0048] 実施例 5 コーン由来分画精製品を用いたビールテイスト飲料の製造
醸造条件
発酵原料として、コーン原料 100%のもの(水準 1 :比較例)、および実施例 2で得た コーン糖化スターチと実施例 3で得たコーンタンパク分解物とを各種の比率で混合し たもの(水準 2〜4)、またはそれに更に実施例 1で分画したコーン繊維画分の高温高 圧水処理物(HHS)を混合したもの(水準 5)を用いて醸造し、ビールテイスト飲料を 製造した。
[0049] 各水準について、具体的配合比を表 1に示す。なお、水準 2については、発酵助剤
(酵母エキス)を添加した。

1)粉碎したコ―ン原料 (胚芽除去済)と水を混合し、プロテアーゼ (ニュートラーゼ 0 .5L : Novozymes A/S)を攪拌しながら 0.1%加え 60°Cで 30分間保持する。

85〜: 100°Cに昇温し、 20分間保持する。

Novozymes A/S)を 0.1 %加え 30分間保持する。

[0056] 5)精製した糖化もろみはマッシュフィルターで濾過を行レ、、清澄化した糖化濾過液 を得、以降は定法にのっとってホップ煮沸、滓分離、糖化液冷却、発酵、濾過瓶詰を 行う。

1)ホップ煮沸釜に、コーン糖ィ匕スターチとコーン蛋白分解物を表 1に記載した所定 量投入し加熱溶解する。

各水準の試験で製造されたビールテイスト飲料の、発酵の程度を化学分析、およ び専門家 6名力 なるパネルによる官能試験により評価した。官能試験の評点の基 準は、爽快さ'キレの良さ'喉越しの良さ'甘味が残らなレ、'未熟成香が有るかの項目 では、いずれも、:感じなレ、 0.0〜強く感じる 5.0で判断した。
[0064] 化学分析の結果を表 2に、官能試験の結果を表 3に示す。
[0065] 水準 1 (比較例)のビールテイスト飲料は、外観発酵度および総ジァセチル類の残 量のいずれにおいても、不満足な結果であった。水準 2〜5、特に水準 3〜5のビー ルティスト飲料はいずれも比較例のものより良好な結果を示した。水準 5の飲料は非 常に満足すべき飲料に仕上がつていた。
[0066] 実施例 6 コーン由来分画精製品を用いたビールテイスト飲料の製造
ホップ煮沸釜に、実施例 2で得られたコーン糖ィ匕スターチ 17.6kg、実施例 3で製造し たコーン蛋白分解物 0.25kg、実施例 4で製造したコーン繊維画分の高温高圧処理 物 20gに、市販の酵母エキス 0.1kg、市販のホップ 120gおよび市販のカラメル 240g を水 92Lに溶解し、 60分間煮沸した後、静置して繊維画分の高温高圧処理物および ホップの粕を除き、発酵原液を得た。この発酵原液に、ビール酵母 (Weihenstephan-3 4株)を生菌数 20 X 106cells/mlになるように添加し、温度 13°Cにて 8日間発酵させた。 炭素源資化終了後、ろ過により酵母を取り除き、 5Lの発酵液に対し 15Lの脱気水に て希釈し、炭酸ガスを添加して低糖発酵飲料を作成した。
[0067] 製造中、発酵不良は全く認めらなかった。また、得られた発酵飲料は、未熟成香や ジァセチル臭は認められず、各分析値は飲料に適した値を示した (表 4)。すなわち 良好な低糖質且つ低カロリーの発酵飲料が得られた。

産業上の利用可能性
本発明により、コーンなど非麦穀物を原料とした発酵飲料の製造において、仕込み 工程の困難さを回避し、また発酵不良の原因を解消し、今までのビールテイスト飲料 に無い喉越しのキレと飲みごたえが確保され、消費者の嗜好を満足させる事が出来 る。

Claims

請求の範囲
[I] 非麦穀物から分画したデンプン画分および非麦穀物から分画したタンパク画分を発 酵原料に用いて醸造したことを特徴とする発酵飲料。
[2] デンプン画分を分解してデンプン分解物を得、別途、タンパク画分を分解してタンパ ク分解物を得、それらの分解物を混合した発酵原料から醸造したことを特徴とする請 求項 1記載の発酵飲料。
[3] デンプン画分を分解する工程ではアミラーゼを用レ、、タンパク画分を分解する工程で はプロテアーゼを用いたことを特徴とする請求項 2記載の発酵飲料。
[4] 非麦穀物から分画したデンプン画分、非麦穀物から分画したタンパク画分に加え、 非麦穀物から分画した繊維画分を発酵原料に用いて醸造したことを特徴とする請求 項 1記載の発酵飲料。
[5] デンプン分解物およびタンパク分解物に加え、高温高圧処理した非麦穀物の繊維 画分も混合した発酵原料から醸造したことを特徴とする請求項 4記載の発酵飲料。
[6] 170〜200°Cの高温高圧条件で処理した繊維画分を混合した発酵原料から醸造した ことを特徴とする請求項 5記載の発酵飲料。
[7] 非麦穀物がコーンである請求項 1なレ、し 6のレ、ずれか 1項記載の発酵飲料。
[8] コーンが未発芽のコーンである請求項 7記載の発酵飲料。
[9] 炭素源の 90。/0以上がコーンのデンプン分解物である発酵原料から醸造されたもので ある請求項 7または 8記載の発酵飲料。
[10] 水を除く発酵原料当たり、デンプン画分が 95〜99.9 %およびタンパク画分が 0.1〜5% 含まれる発酵原料から醸造されたものである、請求項 1なレ、し 9のレ、ずれか 1項記載 の発酵飲料。
[I I] 水を除く発酵原料当たり、繊維画分が 0.01〜1%含まれる発酵原料から醸造されたも のである請求項 10記載の発酵飲料。
[12] タンパク画分がコーンのタンパク画分の分解物であり、水を除く原料当たり、 0.5-1.5 %含まれる発酵原料から醸造されたものである請求項 10または 11記載の発酵飲料。
[13] 麦芽を含めて麦を原料として用いてレ、なレ、ことを特徴とする請求項 1なレ、し 12のレ、ず れか 1項記載の発酵飲料。
[14] 発酵原料にホップも添加したことを特徴とする請求項 1ないし 13のいずれ力 1項記載 の発酵飲料。
[15] 水を除く発酵原料当たり、ホップが 0.01〜1%含まれる発酵原料から醸造されたもので ある請求項 14記載の発酵飲料。
[16] ビールテイスト飲料である請求項 14または 15記載の発酵飲料。
[17] 低糖質ビールテイスト飲料または低カロリービールテイスト飲料である請求項 16記載 の発酵飲料。
[18] ビールテイスト飲料以外の発酵飲料である請求項 1ないし 13のいずれ力 1項記載の 発酵飲料。
[19] 低糖質発酵飲料または低カロリー発酵飲料である請求項 18記載の発酵飲料。
[20] 請求項 1〜: 15に記載した発酵原料を含む水性液を、 目的とする醸造酒の製造に適 する酵母および発酵条件によりアルコール発酵させ、発酵飲料を製造する方法。
