Abstract

 【課題】 迅速で安定した発熱反応を得ることのできる発熱体を使用した食品加熱装置を提供する。  【解決手段】 発熱体1は、袋体10と、袋体10に封入された、アルミニウム粉末、消石灰粉末及び生石灰粉末を含む発熱剤20と、を備える。袋体10は、不織布11に防水層13を付けたベース布に多数の針穴15を開けた包材からなり、透水速度が、水頭27cmの場合に1cm2当り13~81ミリリットル/分である。これにより、標準的と想定される食品加熱の条件下で、被加熱物温度の立ち上がり、上昇温度、上昇温度継続時間が好ましい値となる。

[0001] 本発明は、水と反応して発熱する発熱体を使用して食品(レトルト食品や缶入り飲 料等の調理済み食品など)を加熱する食品加熱装置に関する。特には、低温の水を 使用した場合の発熱特性を向上させた食品加熱装置に関する。
背景技術
[0002] 水と反応して発熱する発熱体としては、従来より、アルミニウム粉末と生石灰 (酸ィ匕 カルシウム)粉末とを混合したものが知られている(例えば、特許文献 1参照)。そして
、このような発熱体を使用して日本酒や駅弁を温めたり、非常時にレトルト食品などの 調理済み食品を再加熱する食品加熱装置も一般的に用いられている。
[0003] この発熱体においては、生石灰を水と反応させて発熱させるとともに、この反応によ つて生成した消石灰 (水酸ィ匕カルシウム)とアルミニウム粉末とを発熱反応させるもの である。このような一連の反応により、食品などを加熱するための十分な発熱量を短 時間で得ることができる。上記の特許文献によると、反応後約 30秒で約 100°Cに達し 、この温度を 20分間以上維持することができるとされている。また、この発熱体は、臭 気を発せず、必要な発熱剤の量も少しで済むと 、う利点を有するとされて 、る。

発明の開示
発明が解決しょうとする課題
[0005] 上述のような食品加熱装置にお!、ては、発熱体は、通常不織布などで作製された 内袋に入れられており、さらに水密性の外袋に密閉されている。使用時には、内袋を 外袋から取り出して、内袋ごと水と接触させて中の発熱剤と反応させる。水は内袋の 不織布を通って内部の発熱剤と反応する。この際、発熱剤と水とが早く接触するほど 、発熱反応の立ち上がりが早いと考えられる。また、発生した熱は温水や水蒸気を介 して拡散していくが、その際に内袋の透水性が高いほど、熱が拡散していく速さが速 いと考えられる。つまり、内袋が水を通す効率 (透水性)も発熱体の発熱反応に寄与 する可能性があると考えられる。しかし、食品加熱装置において、このような内袋の透 水性を考慮した開発 ·提案は現在までなされて 、な 、。
[0006] また、食品加熱装置は反応させる水の温度が低い条件下で使用される場合もある 。そこで、反応させる水の温度が低い条件でも良好な温度特性 (温度の立ち上がり、 保温時間など)を有する食品加熱装置が要求されて!、る。
[0007] 本発明は上記の点に鑑みてなされたものであって、内袋の透水性に着目し、より迅 速で安定した発熱反応を得ることのできる発熱体を使用した食品加熱装置を提供す ることを目的とする。さらには、低温の水と反応させても、良好な温度特性が得られる 発熱体を有する食品加熱装置を提供することを目的とする。

不織布に防水層を付けたベース布に多数の針穴を開けた包材力 なる袋体と、 該袋体に封入された、 40〜60重量%のアルミニウム粉末、 10〜40重量%の消石 灰粉末、及び、 10〜40重量%の生石灰粉末を含む発熱剤と、からなり、
該包材の透水速度が、以下のァ)〜ェ)の条件で、 1cm2当り 13〜81ミリリットル Z 分であることを特徴とする、

[0009] 消石灰 (Ca (OH) )は、水と反応すると加水分解し、強 ヽアルカリ性を呈す。また、 消石灰の溶解度は低温ほど高いことが知られている(例えば、 0°Cで 0. 189wt%、 8 0°Cで 0. 106wt%)。一方、アルミニウムは常温では水と反応しないが、アルカリ環 境下では、以下の水の分解反応が生じる。

よって、右辺への平衡移動、つまり、発熱反応が生じるためには、溶解した Ca (OH ) が加水分解し、 pHをアルカリ側へシフトさせて、アルミニウムの溶解速度を増大さ

せる必要がある。
そこで、低温時に溶解度の高い消石灰を混合粉体原料に予め混合しておくこと〖こ より、反応させる水の温度が低い場合でも、良好な発熱特性を得ることができる。
[0011] アルカリ物質として、 NaOHや KOHは毒劇物であるので、食品加熱用には適用で きない。一方、加水分解による解離が大きい物質は、反応が瞬時に終了してしまうた め、ご飯などを温める目的には不向きであると考えられる。つまり、食品加熱装置の 外部に放出されてしまう熱量が大きぐ反応が継続的に進行しない。
[0012] したがって、コスト面も考慮すると、アルカリ物質として消石灰 (水酸ィ匕カルシウム)を 用いるのが、コストや製造方法の点で好ましい。
[0013] 本発明によれば、袋体の透水速度を変えることによって上記の発熱反応をコント口 ールすることができる。そして、透水速度を、水頭 27cmの場合に lcm2当り 13〜81ミ リリットル Z分、好ましくは、 13〜65ミリリットル Z分、さらに好ましくは、 22〜44ミリリツ トル Z分とすることにより、標準的と想定される食品加熱の条件下で、被加熱食品の 温度の立ち上がり、上昇温度、上昇温度継続時間が好ましい値となる。さらに、袋体 からの発熱剤の漏れを防ぐことができる。 [0014] 本発明にお ヽては、前記発熱剤が、 10〜40重量%の生石灰粉末を含む。

合物であるため、アルミニウムと反応して熱が発生する。したがって、温度の立ち上が りが速くなる。
[0016] 本発明においては、 前記発熱剤力 40〜60重量0 /0のアルミニウム粉末と、 10〜 40重量%の消石灰粉末と、 10〜40重量%の生石灰粉末と、を含む。
[0017] 従来より、アルミニウムと生石灰 (CaO)からなる発熱剤を水と反応させて発熱反応 を起こす加熱装置が知られている。本発明者は、この発熱剤が、最初に消石灰 (Ca ( OH) )を含むことによって、反応させる水の温度が低い場合でも、良好な温度特性

が得られることを見い出した。そして、この発熱剤を使用することにより、反応させる水 の温度が 5〜30°C (使用環境— 10〜40°C)の場合に、食品(レトルトのご飯やカレー 、 350ミリリットルペットボトル入りお茶など)を、例えば、反応開始から 5分後に 40°C以 上、 10分後に 60°C以上、 20分後に 60°C以上に加熱する条件を達成できる。
[0018] 本発明の発熱剤及び不織布の材質や物性としては、以下のようなものを挙げること ができる。
本発明の袋体の不織布の材質は、コットンやパルプ羊毛などの天然繊維、ピスコ一 ス(レーヨン)ゃキュプラなどの再生繊維、または、 6—ナイロン、 6, 6—ナイロンなど のポリアミド、ポリエチレンテレフタレート、ポリトリメチレンテレフタレート、ポリブチレン テレフタレート、ポリ乳酸、ポリグリコール酸をはじめとする直鎖又は分岐の炭素数 20 までのポリエステル類、ポリエチレン、ポリプロピレンなどのポリオレフイン類、アクリル などの合成繊維などを用いることができる。これらは 2種類以上の素材のものを複合し て使用してもよい。また、不織布の製造方法は、スパンレース法、スパンボンド法など によることがでさる。
[0019] 不織布の物性は、目付 (秤量)(gZm2) ;40〜70、厚さ( m); 170〜460、縦引 張強度 (NZ5cm) ; 35〜380、横引張強度 (NZ5cm); 13〜165、縦引張伸度(% ) ;80以下、横引張伸度(%) ; 120以下のものなどを用いることができる。 また、防水層は、例えば、合成樹脂フィルムをラミネート加工することにより形成する ことができる。合成樹脂フィルムとしては、ポリエチレン、ポリプロピレンなどのポリオレ フィン系榭脂、ポリアミド系榭脂、ポリエステル系榭脂、ポリ塩ィ匕ビュル系榭脂、ポリス チレン系榭脂、共重合ポリアミド系榭脂、共重合ポリエステル系榭脂、エチレン 酢 酸ビュル系榭脂、エストラマーなど、あるいは、それらの二種類以上の混合樹脂から なる単層フィルムや積層フィルムを用いることができる。合成樹脂フィルムの厚さは、 0
. 01〜0. 3mm、好ましくは、 0. 02〜0. 1mmである。
[0020] また、レトルトのごはんやカレー、及び、ペットボトル入りのお茶を適温に加熱するた めの発熱剤の重量は、 30g以上が好ましい。発熱剤におけるアルミニウム粉末、消石 灰、生石灰粉末の重量比は、アルミニウム:消石灰:生石灰 =40〜60: 10〜40: 10
〜40である。特に、温度の立ち上がりと温度の持続性の点で、アルミニウム:消石灰: 生石灰 = 40〜50: 15〜40: 20〜40であること力 子まし!/ヽ。
[0021] さらに、ァノレミニゥムの粒度分布は、例えば、〜45 m; 70〜95%、 45〜63 μ m;
5〜20%、 63〜75 /ζ πι;0〜5%、 + 75 m;0〜5%のものを使用できる。
消石灰の粒度分布は、〜45 m;0〜10%、 45~75 m;0〜30%、 75~150 μ m; 20〜45%、 + 150 /ζ πι; 30〜78%のものを使用できる。
生石灰粉末の粒度分布は、〜75 /ζ πι; 5〜25%、 75〜150 /ζ πι; 20〜40%、 + 1
50 πι;45〜65%のものや、〜75 πι; 25〜90%、 75〜150 m; 5〜70%、 + 1
50 μ m;0〜15%のものを使用できる。
[0022] 食品の例としては、レトルト食品や缶入り飲料、ゆで卵、お弁当などを挙げることが できる。
また、容器の形状としては、袋、箱や鍋を挙げることができる。容器に設ける排出口 は、発熱剤の上記発熱反応により発生した Hや H Oが排出されるもので、口の大き

さや数は、保温性を確保しつつ容器の膨張や破壊を防止できるように選択する。 発明の効果
[0023] 以上の説明から明らかなように、本発明によれば、標準的と想定される食品加熱の 条件下で、被加熱食品の温度の立ち上がり、上昇温度、上昇温度継続時間が好まし い値となる発熱体を用いた食品加熱装置を提供できる。特には、反応させる水の温 度が低い場合にも、良好な温度特性が得られる食品加熱装置を提供できる。また、 発熱剤の物性のみでなぐ袋体の透水性によっても発熱性をコントロールできること が確認された。
発明を実施するための形態
[0024] 以下、本発明の実施の形態について、図面を参照しながら詳細に説明する。
まず、袋体の透水性について説明する。
[0025] <透水性 >
袋体基材に種々の径で針穴を開けたサンプルを用意し、各サンプルの透水性 (透 水速度)を計測した。
(1)袋体基材
袋体の基材としては、非撥水性の不織布(100%レーヨン、 MR— 50ZPP40、国 光製紙社製)を使用した。同不織布の物性は、目付 (秤量)(gZm2) ; 50、厚さ m ) ;400、縦引張強度 (NZ25mm) ;41、横引張強度 (NZ25mm) ; 9. 5、縦引張伸 度(%) ; 27以下、横引張伸度(%) ; 120以下、である。今回使用した不織布はスパ ンレース法で作製されている。スパンレース法とは、高圧の水流を柱状に噴射して繊 維を絡ませる製法で、柔軟でドレープ性に富み、羽毛立ちのない不織布を製造でき る。この方法で製造された不織布は、主にォムッや医療資材、食品用や掃除用の生 活資材に使用されている。不織布の一面には防水層(PP製)が押出しラミネート加工 により設けられている。その他に、加熱貼りあわせなどによることもできる。防水層の厚 さは 40 /z mである。
[0026] (2)針穴
上記基材に、針穴装置を使用して、種々の径で針穴を開けた。今回使用した針穴 装置は、表面に、針が横方向に 3. Omm間隔、縦方向に約 2. 9mm間隔で立設され たローラと、このローラに対向する基材支持ローラを有する。なお、針を加熱して針に 触れたラミネートフィルムの部分を溶融して穴を開ける方式のものもある。上述の基材 支持ローラに基材を固定し、両ローラを反対方向に回転させて、基材の全面に、針 穴をほぼ一様な密度で形成した。そして、ローラの接触深さを変えることによって、針 穴の径 (0. 05〜0. 4mm)を変えた基材を 6個準備した。針穴の密度は、 1150個7 100cm2である。なお、針穴の径が大きくなると、粒径の小さい発熱剤粒子が袋体か ら外に漏れやすくなり、好ましくない状況が起こる場合もあり得るので、発熱特性が得 られる範囲で、より/ J、さい径(0. 05〜0. 4mm)とした。
この基材を 50mm X 50mmの寸法に裁断したものをサンプルとした。
[0027] (3)透水性
一般的に、布等の透水性を示す標準となる公的な規格は存在しない。そこで、有孔 フィルムの透水速度を測定する方法を基にして、以下に説明する透水速度計測方法 により各サンプルの透水性を測定した。
[0028] 図 3は、今回使用した透水速度測定方法を説明する図である。
まず、ステンレス製の測定用タンク 51 (内寸 335 X 535 X 178mm)を用意し、同タ ンクに 23 ± 3°Cのイオン交換水を満たす。タンク 51の側面下方にはイオン交換水が 流入する流入管 53が設けられており、同管の上方には流出管 55が設けられている。 各管はコック 54、 56で開閉可能である。イオン交換水は、流入管 53からタンク 51に 入れられて、流出管 55から排出される。
[0029] タンク 51の底面には、下方に延びる流出管 57 (径; 19. 05mm)が設けられている 。流出管 57はコック 58で開閉可能である。流出管 57の出口に、サンプル Sを、防水 加工面を上側にして輪ゴム 59で仮止めし、シーリングテープで完全に出口を覆うよう に巻き付けた後、不透水性の PP粘着テープで周囲を固定する。流出管 57の出口と 流出管 55と間の高さ(水頭) Hは、 270± 9. 5mmである。そして、この出口の下方に 採取容器 61を設置する。採取容器 61は重量はカゝり(図示されず)(GF— 3000、 A &D社製)上に載置されている。
[0030] 両コック 54、 56を開いてタンク 51をオーバーフロー状態に維持し、流出管 57のコッ ク 58を開いて採取容器 61で採取された水の量 (ミリリットル)を計測する。この際、単 位時間あたりの透水量の安定した後(10秒間に連続して計測された透水量のバラッ キが少なくとも 3回以上 5%内となった後)、 1分間以上測定し、任意の 1分間に計測さ れた量を透水量 (ミリリットル)とする。そして、 1分間のサンプル lcm2当りの透水量を 透水速度 (ミリリットル ZminZcm2)に換算する。イオン交換水の比重は 1. 000 (g/ cm )とした。 [0031] 次に、計測された透水度と、公知の通気度との関連を調べた。というのは、透水度 の試験は手間が力かるので、もし通気度との相関があれば、通気度の試験で代用す ることができる力 である。
通気度は、ガーレ式デンソメータ(RANGE ; 300ml、 TIMER; s、 t< 1、測定部直 径; 30mm、株式会社東洋精機製作所製、 JIS P8117準拠)を使用して計測した。 測定された値 (secZ300ml)を、通気速度(ミリリットル ZminZcm2)に換算した。
[0032] 上記の方法で作製した、異なる針穴径の 6個のサンプルについて、上記の方法で 透水度を計測し、ガーレ式デンソメータを使用して通気度を計測した。
[0033] 表 1は、各サンプルの通気度と透水度の測定値及び同測定値力 換算した通気速 度と透水速度を示す。

[0034] 図 4は、透水速度と通気速度の関係を表すグラフである。縦軸は、本例で計測した 透水度力 換算した透水速度を示し、横軸は、ガーレ式デンソメータで計測した通気 度から換算した通気速度を示す。
グラフに示すように、透水速度と通気速度は一次関数で近似される。この近似式か ら、本例の袋体材料においては、透水速度:通気速度 ^ 1 : 5. 5の関係が得られた。 透水速度の測定は上述のように手間が力かるため、サンプルの透水速度を容易に 推定できる通気速度に置き換えて以降の実験を進める。なお、透水速度は、通気速 度 /5. 5で求めることとする。
[0035] <袋体の透水性と発熱温度との関係 > 上記の袋体を使用して発熱体を作製し、この発熱体の発熱温度と袋体の通気性の 関係について調べた。
(1)使用した発熱剤
発熱剤は、アルミニウム粉末(#280A、ミナルコ製) 20g、消石灰粉末 (特選、田源 石灰製) 10g、生石灰粉末(田源石灰製) 20gの混合粉末を使用した。
粒度分布【ま、ァノレミニゥム粉末 ίま、〜45 m;90.80%, 45〜63 m;8.30%, 63〜75/ζπι;0.64%、 +75^πι;0.25%、消石灰は、〜 45 m;4.60%、 45〜 75^πι;21.90%, 75~150^πι;35.92%、 +150^πι;37.58%、生石灰は、 〜75/ζπι;15.68%, 75~150^ m;34.24%、 +150^πι;50.07%である。 生石灰の物性は、酸化カルシウム; 93%以上 (EDTA滴定法 (ΝΝ指示薬)により 測定)、二酸化炭素; 2.0%以下 (ストレライン法にて測定)、不純分; 3.2%以下 (過 塩素酸法、 EDTA滴定法、吸光光度法にて測定)である。なお、不純分とは、二酸ィ匕 珪素、酸ィ匕アルミニウム、酸化第二鉄、酸ィ匕マグネシウムの合計である。
[0036] (2)袋体サンプル
袋体のサンプルとしては、透水性を計測したサンプルと同じ不織布を使用して、口 一ラーの接触深さを変えて針孔径を変えて、以下の通気速度のサンプルを作製した サンプル 1 ;60〜: L10 (ミリリットル ZminZcm2)、
サンプル2;110〜180(同上)、
サンプル 3; 180〜250 (同上)、
サンプル 4; 250〜340 (同上)、
サンプル 5; 340〜450 (同上)、
サンプル6;450〜550(同上)。
これらのサンプルで袋体 (発熱体収容部; 70mm X 170mm)を作製し、発熱剤を 封入した。
[0037] (3)発熱温度計測方法
図 5は、温度計測方法を説明する図である。
排気口 32を有する加熱袋 31に、発熱体 1、食品(この例では、レトルトご飯 1個と 35 0ミリリットルのペットボトル入りお茶 1個、あるいはレトルトご飯 1個とレトルトカレー 1個 ) D、水 W130gを入れた。この例では、開口部が密閉可能に開閉される加熱袋 31に 、径が 5mmの排気口 32を 2個設けた。温度が 20°Cに保たれた恒温室内(ただし、低 温環境時での発熱温度計測は— 10〜10°C)において、加熱袋 31を、断熱材 71上 に設置したステンレス容器 73内に保持し、発熱開始から 20分間、加熱袋 31内の雰 囲気温度 (蒸気温度) Tl、温水温度 Τ2、環境温度 Τ3、ならびに、食品の温度 Τ4を 計測装置 Dで計測した。
[0038] そして、各サンプルにお 、て、恒温室環境下で食品温度 Τ4が以下の条件を満足 するかどうかについて検討した。
条件 A
ァ) 5分後に 40°C以上であること。
ィ) 10分後に 60°C以上であること。
ゥ) 20分後に 60°C以上であること。

ァ) 5分後に 50°C以上であること。
ィ) 10分後に 60°C以上であること。
ゥ) 20分後に 65°C以上であること。

ァ) 5分後に 60°C以上であること。
ィ) 10分後に 65°C以上であること。

[0040] 以上の結果から、以下のことが分かる。
(1)袋体の通気速度により発熱温度をコントロールできる。
(2)食品を加熱するために適する袋体の通気速度は 110〜340ミリリットル ZminZc m2 (透水速度は約 24〜44ミリリットル ZminZcm2)である。
なお、通気速度が 60〜450ミリリットル ZminZcm2 (透水速度は約 13〜65ミリリツ トル ZminZcm2)でも十分に加熱することができる。
また、通気速度が 60〜550ミリリットル ZminZcm2 (透水速度は約 13〜81ミリリット ル ZminZcm2)でも、被加熱物が少量 (例えば、レトルトご飯 1個)であれば、十分カロ 熱することができる。
以上の結果より、食品の加熱に適した袋体の透水速度は、 13〜81ミリリットル mi n/cm2といえる。
[0041] 発熱剤の発熱は、前述のように消石灰の加水分解によるアルカリ環境が形成され た後の、アルミニウムの発熱反応によるものと、生石灰の水和反応による発熱による アルミニウムの発熱反応によるものがあると考えられる。そして、低温環境 (低水温)に おいては、これらの単独の反応のみでは十分な発熱特性が得られない。しかし、生 石灰の一部を消石灰に置き換えると、温度の立ち上がり特性がよくなる。この理由は 、アルミニウム +消石灰の場合は、 Ca (OH) の水に対する溶解度は大きいが、低温

では溶解した Ca (OH) の加水分解が遅いため、アルミニウムの溶解速度も遅く、反
2
応開始が極めて遅 、と考えられる。
[0042] 一方、アルミニウム +生石灰(CaO)の場合は、 CaOの水和反応により生じた Ca (0 H) の水に対する溶解度は、前述の水和反応による生成熱で水温が 70〜80°Cまで
2
急激に上昇してしまうためそれほど高くない。そのため、加水分解速度は速いが、 pH がアルカリ側へシフトするまで時間を要してしまうと考えられる。
[0043] また、アルミニウム +消石灰 +生石灰の場合は、加水直後から Ca (OH) が溶解し
2
、 CaOの水和反応による生成熱で、その加水分解速度が速くなり、アルミニウムの溶 解が始まるまでの時間が短くなる。このため、発熱反応の始まりが低温環境でも早ぐ 温度の立ち上がり特性が良くなると考えられる。そのため透水速度を、アルミニウム + 生石灰のみの配合より小さくすることで、その温度持続性が向上すると考えられる。
[0044] 次に、特に低温環境時 (反応させる水の温度 5°C)に、発熱剤の組成及び重量比が 発熱温度に与える影響について説明する。
(1)発熱剤組成
上記の透水性測定に使用した発熱剤の各成分と同じ物性を有するアルミニウム粉 末、消石灰粉末、生石灰粉末を用いて以下の重量比を有する発熱剤サンプル (全重 量 50g)を作製した。

サンプル 2; ;アルミ:二ゥム: :消石灰: :生石灰 = 60: :10: :30、

サンプル 5; ;アルミ:二ゥム: :消石灰: :生石灰 = 40: :20: :40、
サンプル 6; ;アルミ:二ゥム: :消石灰: :生石灰 = 50: :30: :20、
サンプル 7; ;アルミ:二ゥム: :消石灰: :生石灰 = 60: :30: :10、
サンプル 8; ;アルミ:二ゥム: :消石灰: :生石灰 = 30: :30: :40、

サンプル 14;アルミニウム:消石灰:生石灰 =45: 5: 50、 サンプル 15;アルミニウム:消石灰:生石灰 = 60: 5: 35。
[0045] (2)発熱特性
これらのサンプルを、上記の透水性測定に使用した袋体基材 (非撥水性の不織布( 100%レーヨン、 MR— 50ZPP40、国光製紙社製)、透水速度約 40〜44ミリリットル /min/cm2)に封入し、図 5の温度計測方法に従って食品の温度を計測した。この 例では、 20分間の反応後、及び、さらに加熱を 5分間継続した 25分後に、突き刺し 型の温度センサをレトルトご飯の中心部にセットして温度を計測した。そして、加熱条 件 D (25分後に 60°C以上であること)、条件 E (25分後に 65°C以上であること)を満 足するかどうかを判定した。
[0046] 判定結果を表 3に示す。

低温環境下(水温約 5°C)では、表 3の結果より、
(1)アルミニウム、消石灰、生石灰の重量比が、 40〜60: 10〜40: 10〜40の場合に 、食品の加熱条件 D (25分後に 60°C以上であること)を満足する。
(2) 50-60: 10〜20: 20〜35の場合に、条件 E (25分後に 65°C以上であること)を 満足する。 [0048] なお、発熱剤の重量につ!、ては、アルミニウム、消石灰、生石灰の重量比が、 50: 1 5 : 35の発熱剤を使用して、重量 30、 40、 50、 60gの発熱剤を封入した発熱体を作 製して温度試験を行った結果、ほぼ同等の発熱特性が得られた。このため、発熱剤 の重量が 30g以上が好まし ヽと 、える。
実施例 1
[0049] 図 1は、本発明の実施の形態に係る発熱体の構造を説明する図であり、図 1 (A)は 平面図、図 1 (B)は断面図である。
この発熱体 1は、袋体 10と、同袋体 10に封入された発熱剤 20とを備える。
[0050] 袋体 10は、非撥水性の不織布 11 (100%レーヨン、 MR— 50ZPP40、国光製紙 社製)で作製される。袋体 10には、全面にほぼ一様な密度で針孔 15が開けられてい る。針穴 15の径は、 0. 1〜0. 3mmである。上記に説明した測定方法(図 3参照)で 測定した、袋体 10の透水速度は約 40ミリリットル ZminZcm2である。なお、この値は 、ガーレ式デンソメータで計測した通気速度力も換算できる。袋体 10の寸法は、 70m m X 170mmである。
[0051] 発熱剤 20は、アルミニウム粉末( # 280A、ミナルコ社製) 25g、消石灰粉末 (特選、 田源石灰製) 7. 5g、生石灰粉末(田源石灰製) 17. 5gを混合した混合粉末である( アルミニウム、消石灰、生石灰の重量比; 50 : 15 : 35、全重量 50g)。この発熱剤 20 を袋体 10に収容し、発熱体 1を製造した。
実施例 2
[0052] 実施例 1と同様の発熱剤(アルミニウム、消石灰、生石灰の重量比; 50 : 15 : 35、全 重量 50g)を、透水速度が約 81ミリリットル ZminZcm2である袋体 10に収容し、発熱 体 3を製造した。
実施例 3
[0053] 図 2は、本発明の実施の形態に係る食品加熱装置を示す図である。この例は、レト ルトご飯 1個とレトルトカレー 1個を加熱する装置を示す。
食品加熱装置 30は、排気口 32を有する加熱袋 (容器) 31と、図 1に示す発熱体 1と 、反応用の水 Wとを備える。この例では、径が 5mmの円形の排気口 32を 2個設けた 。排気口 32としては、径が 3〜7mmの孔を 2〜4個設けることができる。なお、容器に よっては、径が 10〜15mmの孔を 1〜2個、あるいは、径が l〜2mmの孔を 8〜10個 設けてもよい。また、排気口の形状は、円形でなくても水蒸気や水素を逃がすことの できるものであれば可能である。さらに、三方シール袋の場合は、開口部を折り返し たものでもよい。
なお、発熱体 1は空気中の水分との反応を防ぐため、保管時には気密性の外袋に 入れられている。
[0054] 外袋から取り出した発熱体 1と、レトルトご飯 1個とレトルトカレー 1個 Dを加熱袋 (容 器) 31に入れ、水温約 5°C、重量 130gの水 Wをカ卩えて同容器 31を密封した。発熱 体 1は発熱反応を起こし、同容器 31に入れたレトルトご飯 1個とレトルトカレー 1個 D が加熱された。発熱反応により発生した蒸気やガスは、加熱袋 31の排気口 32から排 出された。その結果、 25分後にはご飯は 67. 3°Cに加熱され、発熱剤 1の漏れも起こ らなかった。
実施例 4
[0055] 実施例 3と同様の食品加熱装置において、発熱体 1の替わりに発熱体 3を使用した 。実施例 3と同様に、外袋から取り出した発熱体 3と、 350ミリリットルのペットボトル入 りお茶 Dを加熱袋(容器) 31に入れ、水温約 20°C、重量 130gの水 Wを加えて同容 器 31を密封した。同様に、外袋から取り出した発熱体 3と、レトルトご飯 1個 Dを加熱 袋 (容器) 31に入れ、水温約 5°C、重量 130gの水 Wをカ卩えて同容器 31を密封した。
[0056] 図 6は、測定時間と加熱温度の関係を示すグラフである。
反応用の水の初期水温が 20°Cの場合は、反応開始から 5分後に水温は 60°C以上 に達し、反応開始後 10分後以降は 80°C以上を維持している。一方、初期水温が 5 °Cの場合も、反応開始から 2分後に水温は 90°Cに達し、約 10分後まで 90°C以上を 維持している力 10分以降急激に低下し、 2分後は 50°C以下に低下した。ただし、 2 5分後に突き刺し型温度センサを使用してレトルトご飯内部の温度を計測した結果、 60. 4°Cであり、レトルトご飯に関しては十分加熱されているといえる。
[0057] また、袋体用の非撥水性の不織布としては、上記の素材の他に、 CO40s (ュ -チ 力社製)などを使用できる。同不織布の物性は、目付 (秤量) (g/m2) ;40、厚さ m) ; 330、縦引張強度 (NZ5cm) ; 35、横引張強度 (NZ5cm); 15、縦引張伸度( %) ; 25、横引張伸度(%) ; 75である。同不織布はスパンレース法で作製されている
[0058] なお、発熱剤のアルミニウム粉末、消石灰粉末、生石灰粉末の重量比、混合粉末 の重量、物性は、上記の値に限定されない。

Claims

請求の範囲
発熱体と、排気口を有する容器と、を具備し、
前記容器に、加熱される食品とともに前記発熱体を入れ、さらに反応用の水を加え 、前記発熱体から発生した熱で食品を加熱する食品加熱装置であって、
前記発熱体が、
不織布に防水層を付けたベース布に多数の針穴を開けた包材力 なる袋体と、 該袋体に封入された、 40〜60重量%のアルミニウム粉末、 10〜40重量%の消石 灰粉末、及び、 10〜40重量%の生石灰粉末を含む発熱剤と、からなり、
該包材の透水速度が、以下のァ)〜ェ)の条件で、 1cm2当り 13〜81ミリリットル Z 分であることを特徴とする食品加熱装置、
ァ)使用水 23士 3°Cのイオン交換水、
ィ)水頭 27±0. 95cm,
ゥ)包材サンプルの透水面積 2. 85cm2,
ェ)単位時間あたりの透水量の安定した後(10秒間に連続して計測された透水量 のノ ツキが少なくとも 3回以上 5%内となった後)、 1分間以上測定し、任意の 1分間 に計測された量を、イオン交換水の比重 1. 000 (g/cm3)として換算し透水量 (ミリリ ットル)とする。
