Abstract

課題:ブドウ糖液糖から、イソメラーゼ、エピメラーゼを用いて製造するグルコースおよびフラクトースおよびプシコース含有の新規甘味料の製造法並びに当該新規甘味料を食品、飲料素材とする利用法の開発及び摂食による肥満を防止できる新規甘味料の開発。 解決手段:ブドウ糖液糖製造プラントによって生成したブドウ糖液糖に、イソメラーゼ、エピメラーゼを作用させることによって、D-プシコースを生成させ、そのことにより、グルコースおよびフラクトース混合液の甘味度および甘味質を保持し、肥満の原因とならない新規甘味料(生成物)並びに製造法並びに使用用途を提供する。
