Abstract

La présente invention concerne une composition liquide pour préparer du café-mousse. La composition liquide comprend des première et seconde compositions liquides obtenues par chauffage ou centrifugation d'un mélange liquide comprenant des protéines, des matières grasses et de l'eau. La première composition liquide présente une première concentration en matière grasse et forme de la mousse sur la surface du café avec du gaz. La seconde composition liquide présente une seconde concentration en matière grasse inférieure à celle de la première concentration en matière grasse et est soluble dans le café. En outre, la présente invention concerne un procédé de préparation de la composition liquide, du café-mousse contenant la composition liquide, ainsi qu'un procédé de préparation de café-mousse à l'aide de la composition liquide.
