Definitions
- the present invention relates to a method for fermenting a deer antler (or deer meat, deer bone, or the like) below with a mushroom concentrate and its fermented product.
- the present invention relates to a method for fermenting an antler using at least one mushroom concentrate selected from a bear mushroom, a mushroom, a chaga and a fermented product thereof.
- Deer antler (Latin name: Cervi parvum cornu) refers to cut and dried young horned young horns on the head of a plum, marok, or other dependent stag, belonging to the cervidae family.
- the unhorned young horn is called a deer horn, the bony horn is called rust and the fall of the next year is called a fall.
- Deer antler is divided into manok, plum, siberian, NZ, and reindeer depending on the mountain and deer.
- antler In oriental medicine, antler has long been considered the best blood tonic. As described in the literature such as Dongbobogam, deer antler has tonic action, view blood action, gangjeong action, analgesic action, hematopoietic action, growth growth promotion action, heart failure treatment action and hyperactivity, etc. In addition, fatigue recovery, physical activity It is known to have many effects such as enhancement and diuretic function of kidney. In addition, antler was found in animal studies, clinical trials, etc., the results of promoting the growth and development of children, anti-aging effect, hematopoietic function, cardiac function, anti-muscle fatigue and analgesic effect, anti-cancer drug side effects, A wide range of therapeutic effects have been reported, including immune enhancing and antistress effects.
- antlers have side effects such as diarrhea, so they can be used in combination with herbal medicines that have astringent action in oriental medicine. At this time, the effect of antler may be lost or reduced, and the effectiveness of antlers in the process of cutting and decoction for use in Chinese medicine The minute is missing.
- Korean Patent Registration No.808060 discloses a manufacturing method of fermenting deer antler using Bacillus lichemiformis KCCM10885P having antler fermentation activity, and Korean Patent Registration No. 329365 fermented antler together with sediment. It has been disclosed a rust solvent and a method for producing the same by increasing the absorption thereof. In addition, the Republic of Korea Patent Publication No. 10-2006-0128117 No.
- 10-2006-0128117 is a Bacillus P-92 strain cultivated by putting the antler pulverized in about 10 to 60 times the weight of the antler in distilled water and incubated for 5 to 7 days It has been disclosed a pharmaceutical composition for immuno-enhancing, intestinal function and cancer prevention and treatment containing fermented antler extract obtained by sterilization and filtration as an active ingredient.
- the present inventors have made various attempts to develop a manufacturing method of high recovery rate and the form of antler can be maintained even after fermentation. As a result, it has been found that the following disadvantages of existing fermentation can be solved by fermentation using one or more mushroom concentrates selected from the group consisting of bear mushroom, chaga mushroom and tung mushroom.
- the existing fermentation was a lot of parts that are discarded using the extract by grinding or decoction of antler, but the present invention is 100% utilizable without discarding the antler, economical by allowing the use of bony rust or bone .
- the fermented product is produced in a liquid state, which requires an additional process, and it is difficult to process various forms.
- the present invention allows the antler to remain intact even after fermentation so as to be modified or used in a desired shape. Easy to use
- the antler since the antler is utilized as it is, it is possible to consume all the active ingredients contained in the antler, the effect is large, and the odor is eliminated during the fermentation process is easy to handle and store.
- Fermentation method of the antler for this purpose is characterized in that the rusted antler is soaked in one or more mushroom concentrates selected from the group consisting of bear mushroom, chaga mushroom, tung mushroom and fermented in grains.
- the mushroom concentrate is boiled by putting the mushroom powder in water, and the antler moistened in the mushroom concentrate is piled on grains boiled with the mushroom concentrate, and fermented at 30 to 45 ° C. for 5 to 10 days.
- the production method according to the present invention can be used 100% antler without loss, it is possible to obtain a fermented product in the form of antler containing 100% antler active ingredient. On the other hand, it is also possible to utilize the old horns rusted or stag bone, boned by the above method.
- the antler fermented product according to the above method contains the active ingredient as it is, it is easy to modify and add the form according to the use, there is no odor and taste is easy to consume. Therefore, it can be used in the form of capsules, pills, powders, extracts, and the like, and can be used for health foods, dairy products, sweet foods such as confectionery, and cosmetics.
- Figure 2 is a photograph of the antler when fermented for 4 days using the mushroom concentrate of Example 1.
- Figure 3 is a photograph of the antler completed fermentation using the mushroom concentrate of Example 1.
- Figure 4 is a photograph of the antler when fermented for 4 days using the shiitake mushroom concentrate of Comparative Example 1.
- Figure 5 is a photograph of the antler when fermented for 7 days using the shiitake mushroom concentrate of Comparative Example 1.
- the present invention relates to a method and formulation for fermenting deer antler (or deer bone, deer meat, etc.) with mushroom concentrate to increase its efficacy.
- the present invention does not ferment the antler by concentrating or pulverizing the fermentation as it is, the form is maintained even after the fermentation is low loss, high efficacy, can be used in various forms in the subsequent process.
- the antler is soaked in one or more mushroom concentrates selected from the group consisting of mushrooms, in particular, mushrooms, chaga, and oyster mushrooms, and then fermented in grains.
- mushrooms such as shiitake mushrooms, oyster mushrooms, roe mushrooms, purple mushrooms, oyster mushrooms, thirsty mushrooms, edible mushrooms, ganoderma lucidum mushrooms, fingerling mushrooms, bear mushrooms, chaga mushrooms, and mushrooms may be used.
- mushrooms such as shiitake mushrooms, oyster mushrooms, roe mushrooms, purple mushrooms, oyster mushrooms, thirsty mushrooms, edible mushrooms, ganoderma lucidum mushrooms, fingerling mushrooms, bear mushrooms, chaga mushrooms, and mushrooms may be used.
- the most efficient mushrooms, chaga, and oyster mushrooms are best, especially when the powders of these three mushrooms are mixed and added to distilled water and heated to produce concentrated solutions.
- the mushroom concentrate is prepared by putting at least one mushroom powder selected from the group consisting of bear mushroom, chaga mushroom, and mushroom in water and boil until it becomes half the amount.
- the amount of water and bear mushroom powder is not particularly limited, but for example, it is preferable to add 5 to 10 g of bear mushroom powder in 400 mL of water. Concentration is preferred until the total amount is 200 mL.
- the cooked grains are not limited in their type but used to facilitate humidity control according to seasons.
- all grains such as soybeans, barley, wheat, rice, buckwheat, rice bran, crude, sorghum, millet, beef, malt, rice husk, soybeans, green beans, and other grains can be used. Do. If other grains are used, the fermentation efficiency is lowered.
- the mixing ratio of buckwheat flour is 10 to 20% by weight of the total grain weight. If it is less than 10% by weight, the effect of humidity control is less likely to occur, and fermentation does not occur well at more than 20% by weight.
- the bottom straw When fermenting, the bottom straw is laid, a basket with a hole is placed on it, and a grain layer such as coarse or wheat is formed in the basket at a height of 1 to 2 cm, and the antler moistened in the mushroom concentrate is placed. Cover the same level again with a layer of grain.
- This layer can be stacked in several layers, preferably up to three layers. When stacked in several layers, the production efficiency is increased, but the fermentation efficiency is most preferably formed in only one layer.
- the grain layer and the antler layer alternately, and then cover the basket with cotton cloth such as Korean paper or gauze and then cover it with straw again.
- the humidity of the antler is soaked in the mushroom concentrate, which is about 90%, but as the fermentation progresses, the humidity decreases to 80 ⁇ 50%. After the fermentation is completed, the humidity reaches 20 ⁇ . During fermentation, the weight is also reduced to about half of the weight before fermentation begins.
- the above boiled grains were laid to a thickness of 1.5 cm, the antlers soaked in the mushroom concentrate on it, and the boiled grains were then covered with 1.5 cm thick to ferment for 7 days in a fermentation chamber at 35 to 40 ° C.
