Abstract

La présente invention concerne un procédé pour la concentration et la purification de caroténoïdes à partir de fibres résiduelles de la production de jus de cajou complet sous conditions contrôlées sans utilisation d'un solvant organique quelconque. Le procédé comprend une pré-macération des fibres de cajou avec utilisation d'enzymes de désagrégation de structures cellulaires, qui agissent sur les tissus fibreux, en combinaison avec des pressages contrôlés dans des cycles successifs d'extraction aqueuse. La concentration de l'extrait brut obtenu par macération/pressage est réalisée à température ambiante avec utilisation de membranes de microfiltration en flux tangentiel. Le produit concentré est alors traité au moyen de techniques de diafiltration en vue de sa purification, ce qui permet d'éliminer une grande partie des constituants indésirables favorisant sa détérioration microbienne et biochimique. Le concentré final présente un potentiel d'application comme colorant pour des aliments destinés à la consommation humaine et animale, notamment dans le secteur des jus et boissons prêtes à consommer du fait de sa très haute solubilité dans l'eau.
