Abstract

Selon la présente invention, la cuisson contrôlée des aliments contenus dans des récipients métalliques est obtenue par l'intermédiaire du chauffage par induction des récipients métalliques. Les récipients métalliques peuvent être chauffés de manière continue en les faisant passer derrière des panneaux de chauffage par induction. Les récipients métalliques présentent une structure destinée à améliorer le transfert de chaleur depuis les parois du récipient métallique jusqu'aux aliments et également pour favoriser le mélange des aliments. Un filtre complète l'agencement et est combiné avec le récipient métallique afin de permettre un dégazage et de permettre un accès à l'intérieur du récipient à des sondes de capteur. Les récipients métalliques peuvent être chauffés dans un dispositif de chauffage par induction qui comprend une cavité destinée à recevoir les récipients métalliques. L'utilisation d'un dispositif de chauffage par induction et des récipients métalliques permet la distribution des aliments qui ont été récemment chauffés selon les spécifications du client.
