Definitions
- the present invention relates to edible plant dry powder, food and drink, and a method for producing the same.
- Dry food powder has a low water content and a large surface area, so it has the problem of absorbing moisture in the atmosphere and becoming damp. If the dry powder becomes damp, there is a risk that it will be lumpy and unusable, or that microorganisms will propagate and the flavor and color tone will deteriorate.
- Patent Document 1 discloses that when it is made into a bag, it has a sufficient barrier property to protect the powdered food from moisture and air (oxygen) and to improve the quality of the powdered food.
- a technique for preventing deterioration of a packaging film for a powdered food has been disclosed.
- Patent Document 2 discloses a technique relating to baked food products in which at least the outer surface is covered with an edible film material and baked.
- Patent Document 3 discloses a technique relating to a moisture absorption inhibitor or an anti-caking agent containing a powdery fat and oil-containing adhesive composition.
- Patent Document 4 discloses a technique for preventing the moisture-consolidation of a powdered food or drink by blending a polyglycerin fatty acid ester having an HLB of 5 or less with the powdered food or drink or a raw material thereof.
- the dry powder has a remarkably large surface area, and it was difficult to cover the entire surface with an edible film material or the like.
- the method of Patent Document 3 can be applied to powder, there is a problem that the flavor of the powdery fat and oil-containing adhesive composition itself affects the flavor of the dry food.
- the method of Patent Document 4 it is described that the influence on the sensory quality of the powdered food is not affected as much as possible, and although it is considered that the influence on the flavor of the dry powder is low, additives other than the main ingredients of the powdered food can be used. The need was a challenge.
- the present invention is to provide an edible plant powder that is not easily damp and a method for producing the same, regardless of the active substance other than the dry edible plant that is the main ingredient for imparting characteristics to the flavor and color tone of the dry powder. is there.
- the present inventors as a result of intensive studies in view of the above circumstances, pay attention to the effect of the non-edible part of the edible plant, which is not in the conventional art, and in terms of the angle of repose and the "loose bulk density/tight bulk density". It was newly found that the above-mentioned problems can be easily solved at the same time by adjusting the prescribed shape characteristics of the powder within a certain range. Specifically, in the technical common sense of those skilled in the art, the smaller the value, the less cross-linking, etc., and the angle of repose, which is considered to be an industrially advantageous property, dare to adjust the value to a certain value or more, From the viewpoint of powder fluidity, it is industrially considered that a larger value is industrially advantageous.
- the powder fluidity can be improved. We have found that although it is lost, it becomes less damp. Then, the inventors of the present invention have completed the following invention by further researching based on the above findings.

- the dry powder in the present invention contains an edible part and a non-edible part of a dry edible plant, but the ratio of the non-edible part to the edible part of the dry edible plant is the lower limit of the present invention. From the viewpoint of the effectiveness of the effect, it may be 1% by mass or more, but 3% by mass or more is preferable, 10% by mass or more is more preferable, and 20% by mass or more is most preferable. On the other hand, the upper limit thereof is preferably 200% by mass or less, more preferably 150% by mass or less, and further preferably 100% by mass or less, from the viewpoint of unfavorable flavor such as acridness derived from the non-edible portion. ..
- the dry powder of the present invention by mixing the non-edible portion of the dry edible plant with the edible portion in a specified amount as described above, the fiber characteristics of the non-edible portion allow the repose angle and the "loose bulk density" of the particles.
- the powder has a unique particle structure and shape defined by "/tight bulk density", which results in a powder having good dryness and being hard to damp.
- the fluidity of the dry powder is lost by mixing the non-edible portion of the dry edible plant with the edible portion in a specified amount, but as a result, the effect of increasing the re-drying property of the powder is exhibited, and the drying property is improved. It becomes a powder with good moisture resistance.
- the silicon compound contained in the soil is a dry powder. Since it is known as common general technical knowledge to improve fluidity, by not containing silicon derived from soil as much as possible, the effect of the present invention can be achieved by not improving fluidity, and safety and security can be improved. From the point of view, the quality is suitable for human consumption, which is desirable.

- the discharge method, the drop volume method, the injection method, and the tilt method are known as the measurement methods, but they are measured by the injection method on a fixed disk having a holding edge for holding the dry powder. To do.
- the dry powder is formed by an injection method to form a symmetric, substantially conical laminate on a disk with a fixed radius r (cm) having a holding edge for holding the dry powder.
- H (cm) the height of the holding edge and the highest part of the substantially conical laminate.
- the dry powder of the present invention has a repose angle adjusted to 0.7 rad or more, whereby the fluidity of the particles is lost.
- the repose angle is 0. It is preferably 0.8 rad or more, more preferably 0.9 rad or more, most preferably 1.0 rad or more.
- the upper limit of the angle of repose is preferably 1.3 rad or less, more preferably 1.2 rad or less, from the viewpoint of the fluidity of the dry powder.
- the angle of repose is increased by including a non-edible part of the plant.
- “Loose bulk density/tight bulk density” of powder is an index of powder compressibility and is determined by particle size and shape.
- the loose bulk density is the apparent density when the powder is gently packed in the container without compaction, and includes the factors of the mass of the powder sample without tapping (looseness) and the void volume between particles. The ratio to the volume of the powder. Therefore, the bulk density depends on the particle density of the powder and the spatial arrangement (eg, shape) of the particles within the powder bed.
- the tight bulk density is also referred to as the press density
- the powder is pushed into the container until the volume of the powder does not change any more (under the pressure of 0.6 MPa in the present invention) and compressed. It is an apparent density.
- a plastic syringe LS Disposable Syringe 2 mL: maximum memory 3 mL, full volume of grinding 4.0 mL, inner diameter 1 cm
- LS Disposable Syringe 2 mL maximum memory 3 mL, full volume of grinding 4.0 mL, inner diameter 1 cm
- It is measured by pushing in the plunger (for example with a force of 5 kgf) until the powder volume remains unchanged.
- the "loose bulk density/tight bulk density” is adjusted to 0.88 or less, so that the fluidity of the particles is lost, but as a result, free water is easily released from the particles and although the effect of improving the drying property is exhibited, the "loose bulk density/tight bulk density” is preferably 0.85 or less, more preferably 0.80 or less, still more preferably 0.75 or less.
- the lower limit of "loose bulk density/tight bulk density” is preferably 0.15 or more, more preferably 0.25 or more.
- the "loose bulk density/tight bulk density” is reduced by including the non-edible part of the plant.
- “powder bulk density/tight bulk density” is preferably 0.85 or less because the quality is easily dried, and more preferably 0.80 or less, Most preferably, it is 0.75 or less.
- the lower limit of "loose bulk density/tight bulk density” is preferably 0.15 or more, more preferably 0.25 or more.
- the firm bulk density is an apparent density at the time of tap filling, and is measured by injecting the powder in a sufficient amount while tapping.

- the measurement of the total amount of dietary fiber and the insoluble dietary fiber can be carried out by the method generally used for measuring the components of foods, and for example, the measuring method can be used according to the method described in the Japanese Food Standard Ingredients Table. .. Specifically, as a method for quantifying food dietary fiber and insoluble dietary fiber, a method in which a dry powder is subjected to a modified Prosky method is used.
