  Artificial sausage skin.

The present invention provides an artificial sausage skin as a replacement for the intestines used in the production of sausage or similar edibles. It has already been proposed to make sausage skins from silk or other thread, and attempts have also been made to use paper, parchment and the like for this purpose. It has also been suggested. Tissue, e.g. B. gauze fabric, to be used for this purpose, which, in order to be able to use them for the production of sausage products, must be impregnated with a glue-like or paste-like mass.

Such a sausage skin will always retain its original size and since the sausage material shrinks during cooking and dries up with long-life sausage, air spaces are created in and around the sausage material which very quickly spoil the contents of the skin, e.g. B. the sausage bring about. In addition, this skin made of tissue is completely indigestible and the consumption of even small pieces can cause severe digestive disorders. Accordingly, all of these substances do not meet the requirements for a sausage skin.

According to the present invention, these inconveniences are completely avoided in that the skin consists of the fibers of animal tendons or the like. The tendons are opened up into fine fibers in a known manner, spun and either woven or knitted into round tubes. The fine fibers can also be processed into a paper-like substance in a known manner, from which the sausage skin is then made.

It is used without any impregnation and has the same properties

firmly aH the sausage material and, since animal tendons are in themselves edible and impregnation is not necessary, can be consumed without harm to the body. This skin st. Since it is made from the waste materials from the eye care business, on the one hand it is extremely cheap, on the other hand it is a guarantee for a clean sausage production because the tendons are much cleaner than an intestine, even in a carefully cleaned condition.
