Verfahren zur Darstellung eines haltbaren polyvalenten Vitaminmalzpräparates.
Nach den bisher üblichen Verfahren zur Herstellung von Malzextrakten pflegen stärkehaltige Rohmaterialien durch Kochen zu einer Maische verkleistert, letztere sodann bei höherer Temperatur durch Zusatz eines gewöhnlichen, aus Darrmalz bereiteten diastatischen Malzextraktes verzuckert und das Extrakt nach dem Filtrieren durch Einkochen meist bei gewöhnlichem Druck eingedickt zu werden. Wie entsprechende Tierversuch ergeben haben, werden hiebei die in den Ausgangsmaterialien enthaltenen Vitaminstoffe entweder vollständig oder doch grösstenteils zerstört.
Es wurde nun gefunden, dass man zu einem haltbaren Produkt von hohem Vitamingehalt gelangen kann. wenn man, anstatt die nach besonderem Verfahren (vgl. Patent 81227) aus vitaminreichen Ausgangsmaterialien isolierten Vitamine dem Malzextrakt hinzuzufügen, die Vermälzung solcher Materialien derart durchführt, dass die Vitamine vollständig und vollwirksam in das unbegrenzt haltbare Endprodukt übergehen.
Zu diesem Zwecke wurde :
1. das Darrmalz durch fein geschrotetes, frisches grünes Malz ersetzt, um dadurch die in dem frischen grünen Keimling enthaltenen Vitamine der frischen grünen Pflanzen in das Präparat hineinzubringen. Diese labilen Vitamine werden durch Anteigen des frischen Grün- malzes mit einer ungiftigen, nicht flüchtigen organischen Säure konserviert, wobei als Säurelösung vorteilhaft saurer Pflanzenpresssaft dient, so dass das im frischen sauren Pflanzenpresssaft so reichlich vorhandene antiskorbutische Vitamin in das Präparat hineingelangt ;
2. das Maischen und Mälzen in eine einzige Operation zusammengezogen, indem das entsprechend zerkleinerte vitaminhaltige, stärkereiche Ausgangsmaterial mit der erforderlichen Menge Grünmalzschrot und Wasser bei geeigneter Temperatur gerührt wird ;
3. die Temperatur so gewählt, dass zwar noch ein Optimum der diastatischen Wirkung erreicht wird, aber die Vitamine noch nicht in nachweisbarem Grade geschädigt werden.
Dies wird ermöglicht, indem der angewandten Pflanzensäure eine katalytisch beschleunigende Wirkung auf den diastatischen Prozess zukommt ;
4. das Eindampfen bei möglichst hohem Vakuum, also bei sehr niedriger Temperatur vorgenommen, bis zu einer Konzentration, bei welcher der sehr hohe Maltosegehalt in anti- mikrobiotischer Hinsicht konserviert, während die Vitamine beim Einengen und Aufbewahren durch die organische Säure konserviert werden.
Die Einzelheiten des geschilderten Verfahrens ergeben in ihrer Kombination zu dem vorliegenden Verfahren, indem hiebei ein sonst nicht oder nur auf weit komplizierterem Wege erhältliches, unbegrenzt haltbares, wohlschmeckendes und leicht bekömmliches Vitaminmalzpräparat gewonnen wird, einen neuen technischen Effekt : die möglichst vollständige Vermälzung der Stärke unter diesen Bedingungen, unter gleichzeitiger Erhaltung der Vitamine.

stimmten Reduktionsfähigkeit gegenüber Fehlingscher Lösung erreicht ist, was in cirka 3-4 Tagen der Fall ist. Darauf wird filtriert, gepresst und im Vakuum auf einen entsprechenden Gehalt eingeengt.

Process for the production of a durable polyvalent vitamin malt preparation.
According to the usual methods for the production of malt extracts, starchy raw materials tend to be gelatinized by boiling to form a mash, the latter is then saccharified at a higher temperature by adding an ordinary diastatic malt extract prepared from Darrmalz and the extract is usually thickened after filtering by boiling under normal pressure . As corresponding animal experiments have shown, the vitamin substances contained in the starting materials are either completely or largely destroyed.
It has now been found that a long-lasting product high in vitamins can be obtained. if, instead of adding the vitamins isolated from vitamin-rich starting materials according to a special process (cf. Patent 81227) to the malt extract, the malting of such materials is carried out in such a way that the vitamins are completely and fully effectively transferred into the end product which can be kept indefinitely.
For this purpose:
1. Replace the kiln malt with finely ground, fresh green malt in order to bring the vitamins of the fresh green plants contained in the fresh green seedling into the preparation. These unstable vitamins are preserved by pasting the fresh green malt with a non-toxic, non-volatile organic acid. The acidic solution used is advantageously acidic pressed vegetable juice, so that the antiscorbutic vitamin, which is so abundant in the fresh, acidic pressed vegetable juice, gets into the preparation;
2. Mashing and malting are combined into a single operation by stirring the appropriately chopped, vitamin-rich, starch-rich raw material with the required amount of green malt grist and water at a suitable temperature;
3. The temperature is chosen so that an optimum of the diastatic effect is achieved, but the vitamins are not yet damaged to a detectable degree.
This is made possible by the fact that the applied vegetable acid has a catalytically accelerating effect on the diastatic process;
4. The evaporation is carried out at the highest possible vacuum, ie at a very low temperature, up to a concentration at which the very high maltose content is preserved from an antimicrobial point of view, while the vitamins are preserved by the organic acid during concentration and storage.
The details of the described process, in their combination with the present process, result in a new technical effect: the most complete possible malting of the starch in a vitamin malt preparation that is otherwise unavailable or only available in a far more complicated way, has an unlimited shelf life, is tasty and easily digestible these conditions, while maintaining the vitamins.
