Abstract

Un procédé de préparation d'une émulsion d'assaisonnement alimentaire dans laquelle une phase discontinue telle que de l'huile est finement dispersée dans une phase continue aqueuse. La phase discontinue est ajoutée à la phase continue de manière contrôlée dans un moulin colloïdal comportant un intervalle d'émulsionnement relativement grand.
