La présente invention a pour objet un procédé pour améliorer l'aptitude à la panification des farines et pâtes ainsi que pour la préparation d'agents destinés à servir aux fins de ce procédé. 



   On a trouvé   qu'on   peut sensiblement améliorer l'apti- tude à la panification des farines et pâtes en ajoutant à ses substances des produits de   décomposition   de   1*albumine$   par exemple des peptones, des albumoses, des   kyrines,   des pepti- des,   etc..   Des: albumoses et des peptides qui se sont révélées comme. particulièrement convenables sont celles qui proviennent du lait au de la caséine:. 'En   effet, l'emploi du malt sans adjonction simultanée de ces produits de décomposition de l'albumine comporte- cet   inconvénient   que les quantités notables de ferments protéolytiques aptes à décomposer l'albumine contenue dans les farines de malt provo-   quent   en même temps un affaiblissement indésirable du gluten. 



  Grâce à l'emploi simultané de-produits de décomposition de l'albumine avec des produits du malt on acquiert donc la   pos-     sibilité   de tirer parti des propriétés avantageuses des fari- nes de malt, en particulier de leur teneur en sucre fermentes- cible,, tout en évitant leurs inconvénients, en particulier une action défavorable sur le gluten. Il s'ensuit que l'ac- tion favorable heureusement exercée sur la fermentation par les ferments   diastatiques   contenus dans les farines de malt peut être utilisée au maximum. 



   En conséquence, suivant l'invention, on peut égale- ment améliorer dans une large mesure des farines qu'on a additionnées de produits du malt afin d'améliorer leur apti- tude à la panification. 



   La préparation des produits de décomposition de l'albumine utilisés dans l'esprit de   l'invention   peut s'ef- fectuer en utilisant les matières premières les plus- diverses et à l'aide de tout procédé convenable pour la décomposition

 de l'albumine non susceptible d'influencer défavorablement les qualités des produits au goût.

   Un procédé qui s'est révélé com- me particulièrement convenable dans la pratique est celui sui- vant lequel, pour la préparation des produits de décomposition de l'albumine, on part du lait ou du lait écrémé, d'où   l'on   tire les dérivés de l'albumine et les produits de décomposi- tion de   l'albumine   en faisant agir des ferments ayant une ac- tion   peptonisante   ou des bactéries agissant de même, de préfé- rence celles   qui   ne produisent pas d'acide lactique ou n'en produisent   que   dans une faible mesure. Au lieu de préparer ces produits de décomposition de l'albumine par des procédés bio- logiques on peut aussi recourir à des moyens chimiques appro- priés. 



   L'essentiel est alors de veiller par l'emploi judi- cieux des mesures propres à déterminer la décomposition de l'albumine du lait, à ce qu'il y ait un certain enrichissement des produits en substances provenant de la décomposition de l'albumine du lait, enrichissement qui doit au moins dépasser 2 %   mais qu'il   y a lieu-, pour maints usages et suivant la cons- titution de la farine, ou de la pâte à traiter, de porter bien au-delà., par   exemple; jusqu'à   20 % et plus.

   Un emploi de tels agents pour améliorer la panifiabilité des farines ou pâtes n'avait pas encore été proposé jusqu'à ce jour, der même qu'on n'avait pas reconnu qu'une décomposition prononças des substances albuminoïdes et qu'un enrichissement bien plus ac-   centué   de la teneur en produits de décomposition fût   nécessai-   re pour rendre les produits de décomposition de l'albumine pro- pres à cet effet particulier.

   En fait, les préparations obte- nues par les procédés antérieurs, avec leur faible teneur en produits de décomposition de l'albumine et lorsqu'on les   em-   ploie par exemple pour les besoins de la panification, déter- minent bien plutôt un alourdissement de la pâte et sont même susceptibles, dans certaines circonstances, de nuire   considé-   rablement à la panifiabilité au lieu de l'influencer favori   hlement.   



   La préparation d'agents aptes à améliorer la panifia- bilité à partir du lait, notamment du lait maigre, peut s'ef- fectuer en traitant du lait, de préférence préalablement sté- rilisé, au moyen de bactéries ayant une action   peptonisante   ne produisant pas d'acide lactique au n'en produisant que peu, ou au moyen de ferments ayant une action analogue. On poursuit ce traitement, à une température convenable favorisant le dé- veloppement des forces bactériennes ou fermentatives, le cas échéant même en le répétant plusieurs fois ou en employant des sortes de bactéries ou des ferments différents, jusqu'à ce que les produits présentent en vue de l'usage particulier la   te-   neur voulue en substances provenant de la.décomposition de l'albumine.
