   L'invention concerne des matières huileuses ou grasses qui sont ajoutées à la pâte lors de la fabrication du pain, des oouques ou produits analogues, pour lubrifier ou graisser les particules de pâtes et les séparer les unes des autres . 



   L'invention concerne en partioulier des additions aqueuses ou ayant le caractère d'émulsions pour la pâte. 



   L'invention a pour but d'augmenter l'efficacité de oes additions de façon que des quantités relativement petites de ces dernières ou de leurs constituants gras ou huileux suffisent pour fabriquer des produits de boulangerie ou de pâtisserie de bonne qualité. 



   Selon l'invention on arrive à ce résultat en employant une émulsion dont la phase interne ou dispersée oonsiste en une quantité relativement grande d'eau ou d'un liquide aqueux, de manière que, em employant une matière dispersant l'eau, ayant un grand pouvoir émulsionnant envers l'eau, oelle-oi soit distribuée très finement dans la phase grasse ou continue, de sorte qu'il se   forme   une véritable émulsion

 permanente, c'est-à-dire une émulsion dans laquelle les particules d'eau ont des dimensions très petites - de quelques microns ou moins - , chaque particule d'eau étant   entourée   d'une pellicule mince mais résistante dudit émulsionnant. 



   Une addition pour pâtes de cette espèce, ayant une teneur relativement grande en eau présente   à l'état   de fine division stable, possède à un haut degré l'aptitude à une distribution très fine et uniforme dans la pâte . Il est à supposer que ce pouvoir repose sur la consistance très visqueuse de l'émulsion, c'est-à-dire une consistance telle que, lors de   la.   distribution de l'émulsion dans la pâte avec les ingrédients ordinaires, chaque particule d'eau avec son entourage immédiat de matière huileuse ou grasse puisse se mouvoir librement,   indépendamment   des autres particules. 



   Les pellicules huileuses ou grasses, qui forment   l'entou-   rage de chacune de cesparticules d'eau sont par conséquent distribuées uniformément dans   1...   masse avec une exactitude minutieuse, de sorte que toutes les particules de pâtes viennent en contact avec elles, ce qui assure un effet lubrifiant et séparateur d'une uniformité et d'une efficacité inconnues jusqu'ici .
