pour perfectionnement aux machines à attendrir les viandes par Monsieur BARTIER Joseph, rue Hamoir I94.à La Louvière La présente invention a pour objet une nouvelle machine à attendrir les viandes d'une conception telle que le déplace- -ment vertical des pièces mobiles entraînées s'effectue télescopiquement suivant des axes qui coupent un axe horizontal de la pièce entraînante sur laquelle repose et que le dégagement des couteaux tors de la viande à la course ascendante soit assuré automatiquement au moyen d'un dispositif libre prenant simplement appui sur les pièces entrainées et agissant par gravité.
La description de ces dispositifs est donnée ci-après.
Les fig. I et 2 représentent respectivement une vue de face et une vue de profil de la machine.
Les fig. 3 et 4 représentent une première solution du disposi- -tif de dégagement des couteaux.
Les figures 5 et 6 représentent une variante de ce dispositif.
Un bâti A (fig.I et 2) supporte l'ensemble du mécanisme; un levier à main D commande un secteur denté C qui engrène avec une crémaillère faisant corps avec l'arbre vertical B qui peut coulisser dans le bati et au repos, est maintenu dans sa posi- -tion la plus élevée par un ressort de rappel,non représenté sur les dessins.

A l'arbre B est fixé un mandrin E supportant les couteaux multiples F.
D'autre part, un plateau H à travers lequel peuvent passer les couteaux F repose par son simple poids sur le mandrin E. par ex. par l'intermédiaire des saillies X solidaires du plateau H et est guidé par deux tubes verticaux qui font corps avec lui et enveloppent des guides L fixés au bati A. Ces tubes K sont placés de telle sorte que leurs axes coupent un axe horizontal du mandrin E. Sous l'action de la pesanteur, l'ensemble, plateau H et tubes K. suivra dans sa course descendante le mandrin E tant qu'il ne sera pas retenu par un obstacle placé entre le dit plateau H et la base M du bâti. Cet obstacle est normale- -ment la pièce de viande à attendrir. La disposition des tubes K concentriquement aux guides L et coupant un axe horizontal du mandrin E (pièce)entrainante) a pour effet d'assurer la répartition égale de la pression du plateau H sur la viande.
A la course ascendante le plateau H et les tubes K seront entraînés par le mandrin E aussitôt que celui-ci reviendra en contact avec le'plateau H. Afin d'éviter que ce plateau H ne remonte auparavant et pour assurer par conséquent le dégagement des couteaux,chacun des tubes télescopiques K est pourvu d'un dispositif de calage N qui constitue une caractéris- -tique de l'appareil et est décrit ci-après (fig.3 à 6 ) Une masse pesante I repose partiellement ou totalement sur une pièce 2 solidaire du mandrin E lorsque celui-ci est en haut de sa course (fig. 3 et 5) Elle prend appui d'autre part,direc- -tement (fig. 3 et 4) ou par l'intermédiaire d'une pièce arti- -culée (fig. 5 et 6) sur une pièce 3 solidaire du tube K et par conséquent du plateau H.
Cette masse pesante I sous l'action de la pesanteur suit le mandrin E dans sa course descendante.
Dans une première solution,représentée aux fig. 3 et 4, la masse pesante I est constituée par un rectangle,disque ou solide d'autre forme, percé d'un trou dont le diamètre est légèrement supérieur à celui du guide sur lequel il coulisse comme le tube K lui-même; cette masse pesante I repose par une de ses extrémité sur la butée 2 solidaire du mandrin E (fig.3) et prend appui par l'autre extrémité sur la pièce 3 solidaire du

plateau H.
Dans la solution représentée aux fig. 5 et 6, la masse pesante est constituée par un disque ou rectangle percé comme précédemment, elle repose sur la fourche 2 solidaire du mandrin E (fig.5) (fourche qui peut être remplacée par tout autre moyen de support) et, par l'intermédiaire des deux leviers articulés 4 et des deux demi-bagues 5, prend appui dans une cuvette ou sur un plateau à rebords 3, ceux-ci ayant pour but de limiter la course latérale des demi-bagues 5; ce plateau est fixé à la partie supérieure du tube K et afin d'empêcher la retation des demi-bagues 5 celles-ci sont prolongées par des tiges 6 qui coulissent à travers une fente ménagée dans les rebords du plateau 3. La fourche 2 présente une ouverture suffisante pour éviter tout contact avec le plateau
3 dans la course descendante.
Cela étant, le fonctionnement de la machine est le suivant:
Une pièce de viande à traiter étant placée sur la base M, on abaisse le levier à main D, ce qui a pour résultat de faire des- -cendre le mandrin E qui entraine dans sa descente le plateau H . et les masses pesantes I jusqu'au moment où le dit plateau H entre en contact avec la pièce de viande. A ce moment, cette dernière retenant le plateau H, le mandrin E seul continue à descendre et ses couteaux pénètrent dans la viande.
Quant aux masses pesantes I, elles perdent également contact avec les pièces 2 et subissent donc librement l'effet de la pesanteur.
Dans la première solution (fig. 4) chacune des masses I oscille autour de la pièce 3, l'appui pouvant être réalisé de plusieurs façons, par ex. en forme de couteau comme représenté ; lapièce
I se placera obliquement et de ce fait coincera le guide sur lequel elle coulisse.
Dans le cas de la deuxième solution (fig.6) la pièce I continuera à descendre verticalement et par l'intermédiaire des leviers arti- -culés 4 fera déplacer latéralement vers le guide L les deux demi- bagues 5 qui, elles aussi coinceront ce guide.
Les couteaux ayant percé la viande, on remonte le levier D et par- suite le mandrin E. Le dégagement des couteaux hors de la viande est alors assuré du fait que le plateau H appuyant sur cette viande ne peut remonter en même temps. En effet, la pesenteur

continuant à agir sur les masses I, tout effort de remontée du plateau H exercera une pression sur les points d'appui des pièces 3 et par suite augmentera le coinçage sur les guides L. D'autre part, au moment où le mandrin E viendra reprendre le contact avec le plateau H, les pièces 2,remontées simultanément, soulèveront les masses pesantes I, décoinçant les guides L par le fait même, et permettant la course ascendante de tout système.
Il est évident que les guides L peuvent avoir des sections de forme quelconque, pleine ou creuse, et qu'il suffit que les pièces destinées à les coincer épousent la forme du guide, soit à l'exté- -rieur, soit à l'intérieur.

for improvement of meat tenderizing machines by Mr. BARTIER Joseph, rue Hamoir I94. in La Louvière The present invention relates to a new meat tenderizing machine of a design such that the vertical displacement of the driven moving parts s '' performs telescopically along axes which intersect a horizontal axis of the driving part on which rests and that the release of the twisted knives of the meat in the upstroke is ensured automatically by means of a free device simply resting on the driven parts and acting by gravity.
The description of these devices is given below.
Figs. I and 2 respectively represent a front view and a side view of the machine.
Figs. 3 and 4 show a first solution of the knife-release device.
Figures 5 and 6 show a variant of this device.
A frame A (fig.I and 2) supports the entire mechanism; a hand lever D controls a toothed sector C which meshes with a rack forming one unit with the vertical shaft B which can slide in the frame and at rest, is held in its highest position by a return spring, not shown in the drawings.

To the shaft B is fixed a mandrel E supporting the multiple knives F.
On the other hand, a plate H through which the knives F can pass rests by its simple weight on the mandrel E. for example. by means of the projections X integral with the plate H and is guided by two vertical tubes which are integral with it and surround guides L fixed to the frame A. These K tubes are placed so that their axes intersect a horizontal axis of the mandrel E. Under the action of gravity, the assembly, plate H and tubes K. will follow in its downward course the mandrel E as long as it is not retained by an obstacle placed between said plate H and the base M of the built. This obstacle is normally the piece of meat to be tenderized. The arrangement of the tubes K concentrically with the guides L and cutting a horizontal axis of the mandrel E (driving part) has the effect of ensuring the equal distribution of the pressure of the plate H on the meat.
On the upstroke the plate H and the tubes K will be driven by the mandrel E as soon as the latter comes into contact with the plate H. In order to prevent this plate H from rising beforehand and consequently to ensure the release of the knives, each of the telescopic tubes K is provided with a clamping device N which constitutes a characteristic of the apparatus and is described below (fig. 3 to 6) A heavy mass I rests partially or totally on a part 2 integral with the mandrel E when the latter is at the top of its stroke (fig. 3 and 5) It bears on the other hand, directly (fig. 3 and 4) or by means of a articulated part (fig. 5 and 6) on a part 3 secured to the tube K and consequently to the plate H.
This heavy mass I under the action of gravity follows the mandrel E in its downward stroke.
In a first solution, shown in FIGS. 3 and 4, the heavy mass I is constituted by a rectangle, disc or solid of another shape, pierced with a hole whose diameter is slightly greater than that of the guide on which it slides like the tube K itself; this heavy mass I rests by one of its ends on the stop 2 integral with the mandrel E (fig. 3) and bears by the other end on the part 3 integral with the

tray H.
In the solution shown in Figs. 5 and 6, the heavy mass is constituted by a disc or rectangle drilled as before, it rests on the fork 2 integral with the mandrel E (fig. 5) (fork which can be replaced by any other means of support) and, by the 'intermediate the two articulated levers 4 and the two half-rings 5, is supported in a bowl or on a flanged plate 3, the latter having the aim of limiting the lateral stroke of the half-rings 5; this plate is fixed to the upper part of the tube K and in order to prevent the retation of the half-rings 5, these are extended by rods 6 which slide through a slot made in the edges of the plate 3. The fork 2 has a sufficient opening to avoid any contact with the tray
3 in the downstroke.
However, the operation of the machine is as follows:
A piece of meat to be treated being placed on the base M, the hand lever D is lowered, which has the result of lowering the mandrel E which causes the plate H to descend. and the heavy masses I until the moment when said plate H comes into contact with the piece of meat. At this time, the latter retaining the plate H, the mandrel E alone continues to descend and its knives penetrate the meat.
As for the heavy masses I, they also lose contact with the parts 2 and therefore freely undergo the effect of gravity.
In the first solution (fig. 4) each of the masses I oscillates around the part 3, the support being able to be achieved in several ways, eg. knife-shaped as shown; the room
I will be placed obliquely and therefore will wedge the guide on which it slides.
In the case of the second solution (fig. 6) part I will continue to descend vertically and by means of the articulated levers 4 will cause the two half-rings 5 to move laterally towards the guide L which, they also will jam this guide.
The knives having pierced the meat, the lever D and therefore the mandrel E. are raised. The knives are then released from the meat because the plate H pressing on this meat cannot go up at the same time. Indeed, gravity

continuing to act on the masses I, any effort to raise the plate H will exert pressure on the support points of the parts 3 and consequently will increase the jamming on the guides L. On the other hand, when the mandrel E will come in to resume contact with the plate H, the parts 2, reassembled simultaneously, will lift the heavy masses I, thus unblocking the guides L, and allowing the upward stroke of any system.
It is obvious that the guides L can have sections of any shape, solid or hollow, and it is sufficient that the parts intended to wedge them conform to the shape of the guide, either on the outside or on the inside. interior.
