La présente invention a trait à une méthode et un dis- positif de contrôle pour un appareil à cuire,particulière- ment de l'industrie sucrière ou similaire ainsi qu'à un ap- pareil à cuire muni d'un tel dispositif.Cette méthode per- met de déterminer des erreurs dans la circulation de la masse-cuite dans le dit appareil et par conséquent dans la cristallisation des jus et le dit dispositif permet en mê- me   temps   un contrôle permanent de la cuite, 
Jusqu'à présent dans une installation de contrôle existante,on se base sur la transmission de chaleur dans le sens de l'agent   (qui   est de la vapeur d'eau vive,donc à une température plus élevée que la masse-cuite)

  vers la masse-cuite en utilisant un vase de condensation au sein de la masse à cuire.

 l'effet d'une transmission de chaleur,partant de la masse- cuite vers un liquide de mesure à une température sensible- ment   inférieure.On   place un vase de   @   mesure de cons- truction spéciale au sein de la masse à cuire, au centre et vers le bas dans le tube de circulation de l'appareil à cuire.Un courant d'eau,dont le débit est maintenu constant, à une température constante et aussi basse que pratiquement possible (dans l'industrie une température entre 10   et ,1500.   conviendra parfaitement) traverse le vase de mesure et s'é- chauffe,ceci grâce à l'apport de chaleur dû à la circulation de la masse-cuite,

  qui est à une température plus élevée.L'é- tude du phénomène montre que la température finale de l'eau de mesure est fonction: 1  de la température de la masse-cuite, 2  de la circulation de cette masse autour du vase de mesu- re, circulation, qui est influencée elle-même par la viscosité. 



  L'enregistrement de température de l'eau sortant du vase de mesure pourra donner, en fonction du temps,un graphique, lequel indique toute l'évolution de la masse à   cuire.En   même temps le diagramme permet de juger l'appareil à cuire lui-même. toute mapipulation,toute erreur de la part du cui- seur,tout trouble dans la fabrication sera automatiquement enregistré. 



   Le fait de changer le sens de la transmission de cha- leur apporte un avantage considérable.Le vase de mesure se trouve au milieu de l'appareil à cuire à un endroit où le sens de la circulation de la masse est   descendant.La   masse, chauffée par les caissons de chauffage, monte et s'évapore;   @   de ce fait son poids spécifique augmente et elle descend pour la plus grande partie au centre par le tube de circulation.

   C'est alors que cette masse entre en con- tact avec le vase de mesure.Dans une réalisation existante

 (ou l'agent est la vapeur) le vase de condensation joue également le rôle d'élément de chauffage,la masse réchauf- fée a tendance à monter,il y a formation de tourbillons, donc de ce fait la circulation ordinaire est entravée.Dans le cas de l'invention au contraire la massa a tendance à se refroidir,elle gagne relativement en poids et la circulation est plutôt accrue. 



   Une réalisation du dispositif de contrôle consiste en un vase de mesure formant enveloppe entre la masse-cuite et l'eau de mesure. Il comporte un branchement pour une con- duite d'amenée de l'eau de mesure froide,et un second branche ment pour une conduite de sortie de l'eau de mesure chaude, De préférence l'eau froide est amenée au centre du vase et conduite jusqu'au sommet par un tube,partant de la partie inférieure,tandis que l'eau chaude prend son chemin autour du tube central,pour quitter par une sortie   latérale.Une   canalisation particulière,reliant directement la sortie latérale à la chambre de mesure en un point situé au-dessus de l'extrémité du tube central,permet l'évacuation des gaz, principalement de   l'air.La   sortie est en communication avec un tuyau de branchement,

  portant l'extrémité d'une conduite capillaire de thermomètre pour permettre la mesure et 1'.en- registrement de la température de l'eau de mesure chaude. 



   Une forme de réalisation d'un dispositif de contrôle suivant l'invention ainsi que son application à un appareil à cuire de l'industrie sucrière sont représentées à titre d'exemple au dessin annexé. 



   La figure 1 est une vue schématique d'.un appareil à cuire de type connu,muni d'un caisson de chauffage du type à faisceau tubulaire et d'un dispositif de contrôle suivant l'invention. 



   La figure 2 est une section longitudinale d'une forme d'exécution du vase de mesure à plus grande échelle.

   Dans la figure 1 l'appareil à cuire est indiqué par 1. 



  Cet appareil est muni d'un caisson de chauffage 2 du type à faisceau tubulaire.Au sein de la masse à cuire, au centre et vers le bas dans le tube de circulation 3 de l'appareil   à   cuire 1 un vase de mesure 4 est placé,muni de pièces en fer forgé 5 pour la fixation du vase au caisson de chauffage   2.La   partie inférieure du vase de   césure   est en communication avec une conduite d'amenée d'eau de mesure froide 6 et avec une conduite de sortie d'eau de mesure chaude 7,muni d'un robinet de précision 8 pour le réglage du débit.Un thermo- mètre enregistreur 9 est mis en communication à 10 avec la conduite de sortie   7   au moyen d'une conduite capillaire de thermomètre   11.Les   pièces de passage du fond du caisson pour les conduites d'eau 6 et 7 sont indiquées par 12.

   



   Le vase de mesura représenté à une plus grande échelle par la figure 2, comporte une pièce de base 13, munie à la partie inférieure d'un branchement 14 pour la conduite d'ame- née de   1,$eau   de mesure froide (voir fig.l n  6).Latéralement se trouve un branchement 15,pour la conduite de sortie de l'eau de mesure chaude   7.La   pièce 13 possède une chambre intérieure tubulaire 16;elle est coiffée d'un capot tubu- laire 17.L'entrée de l'eau froide dans la chambre de mesure se fait par le tube central 18,jusqu'au sommet du capot.sen- siblement. L'espace de la chambre 16, entourant le tube 18, forme la canalisation de sortie de l'eau de mesure chaude. 



    Elle communique avec le branchement 15.Une canalisation 19 sert pour l'évacuation de l'air et est ménagée dans le pièce   
13. A l'aide du tube 20 la sortie 15 est mise en communica- tion avec l'intérieur supérieur du capot.Il est à remarquer, que le tube 20 doit déboucher dans la chambre de mesure à un niveau supérieur à l'extrémité du tube 18.
