Il est bien connu qu'avec tous les genres de barattes simples ou barattes-malaxeurs, il y a, au cours de l'opération de barattage et surtout au début de celle-ci un dégagement de l'air et des gaz occlus dans la crème*
Cette libération de l'air et des gaz provoque une surpression interne qui peut devenir suffisamment forte pour provoquer un suintement de la crême par le ou les couvercles.
Cette pression interne dans la baratte peut aussi ralentir l'agitation de la crême.
Il est d'usage courant de libérer à plusieurs repri- ses et au début de l'opération de barattage, l'excès de gaz en ouvrant une soupape ou un robinet placé dans ce but sur le corps de la baratte.
Les manoeuvres de cette soupape nécessitent l'arrêt de la baratte provoquant ainsi des certes de temps et ne don- nent pas l'assurance que tout excès de gaz soit libéré après la dernière évacuation.

D'autre part, tenant compte que toutes les faces internes de la baratte sont tapissées de crême dès le premier tour, on constate un entraînement d'un peu de crème par les gaz s'échappant par la soupape. Mais le plus grand inconvénient réside dans le fait que ces soupapes ou robinets sont placés à demeure sur lestarattes et que leur démontage, quand il est prévu, s'avère souvent peu pratique.
En conséquence et dans la grande majorité des cas, il reste de la crême dans l'orifice d'évacuation des gaz et celle-ci se pollue, devient pour les barattages suivants une source d'infection microbienne qui ne contribue pas à l'obten- tion des conditions hygiéniques indispensables pour ces appa- reils.
En plus des gaz et air évacués au début du baratta- ge ,il y a le lavage ou l'échaulage à l'eau chaude de la ba- ratte qui entraîne une autre nécessité d'avoir une évacuation continue car,aux premiers tours de la baratte contenant de l'eau chaude,il se produit un tel dégagement de vapeur que l'usage d'une soupape actionnée à la main est malaisé et dange- re ux
La présente invention a pour but de remédier à ces inconvénients et d'assurer une évacuation automatique des gaz sans interrompre Le fonctionnement de la baratte.
Ce dispositif est caractérisé en ordre principal par la disposition à l'intérieur de la baratte en position ver- ticale ou sensiblement verticale et en général le long d'un des fonds ou de chacun des fonds, d'un tube fixe dont est so- lidaire un tube horizontal débouchant à l'air libre et dont l'axe longitudinal coincide avec l'axe de rotation de la barat- te et qui permet à la baratte de tourner pendant que l'ensemble des tubes évacuateurs reste fixe.
Suivant l'invention, on prévoit également des moyens permettant de maintenir et de verrouiller l'ensemble formé du tube sensiblement vertical et du tube horizontal afin de l'empêcher de tourner ou de retomber dans sa position stable d'équilibre.

Sur les dessins ci-joints, 1 désigne le corps de la baratte muni à chacune de ses extrémités d'axes de rota- tion 2 par lesquels la baratte peut tourner comme d'habitude dans des paliers fixes 3.
Conformément à l'invention, on prévoit en position sensiblement verticale, le long d'un des fonds de l'appareil ou le long de chacun des fonds, un tube fixe 4 qui est de pré- férence légèrement courbé suivant la forme du fond et auquel est soudé ou relié de toute autre manière appropriée un tube horizontal 5 dont l'axe longitudinal coïncide avec l'axe de rotation 2 et qui débouche à l'air libre comme indiqué en 6.
Ce tube horizontal est à frottement doux dans l'alésage cen- tral de l'axe 2 et dans le palier fixe 3.
Le tube vertical 4 est surmonté d'un dôme 7 qui est enfourché sur ce tube et qui est maintenu en bonne posi- tion par une broche 8 fixée dans le tube 1 et sur laquelle le dôme 7 prend par une rainure 9. Ce dôme est muni d'un cou- vercle amovible 10 qui est maintenu en place par des cintra- ges Il du bord de ce couvercle et qui empêche les éclaboussu- res de crême de retomber dans le tube 1 pendant l'opération de barattage.

Les orifices a et a1 de pénétration des gaz dans le tube 1 sont de grande section afin que les gaz y pénètrent sans violence et qu'ils n'entraînent pas de crème vers le tuyau 1. De plus, le tuyau 1 pénètre assez profondément dans le dôme afin de créer une chicane jouant le rôle éventuel de s éparateur de liquide d'avec l'air.
Dans ces conditions, lors de la rotation de la barat- te, les gaz pénètrent dansle dôme 7 par a-a1, subissent un changement de direction en b-b1, puis passent à l'intérieur du tube vertical 1 pour s'échapper à l'air libre en 6 suivant le tube horizontal 5.
A la jonction des tubes 1 et 5, il y a en outre un bouchon amovible 12 permettant un nettoyage aisé de ces tubes.
L' appareilest complété par un dispositif permettant de maintenir et de verrouiller l'ensemble 4-5 pour l'empêcher de tourner avec la baratte ou de retomber dans sa position stable d'équilibre.
Comme le tube horizontal 5 est à frottement doux dans l'axe de la baratte et que le palier 3 est fixe, on conçoit aisément que la baratte peut tourner pendant que le tube ver- tical 4 et son dôme 7 restent immobiles dans la position re- présentée.
L'agencement de verrouillage est constitué d'une tôle 12 coupée à forme pouvant pivoter autour d'un axe 13 par une charnière 14 (fig.4) dont la partie centrale présente une patte 15 de fixation au palier fixe, par exemple par l'in- termédiaire d'une vis 16.
Dans la tôle 12, on a prévu un trou 17 de forme oblongue qui permet le passage de l'extrémité du tube d'éva- cuation horizontal 5 et le libre pivotement de la tôle 12 autour de l'axe 13 fig.4. Après son lavage, sa stérilisation et remise en place du bouchon amovible 1, on introduit d'une main tout le dis- positif4-5 à l'intérieur de la baratte en veillant à tenir le tube 4 dans sa position verticale ; de l'autre main, on fait pivoter la tôle 12 jusqu'à ce que le bout 6 du tube ho- rizontal 5 y soit engage. On soulève ensuite la gâchette 19 du verrou 18 et l'on appuie légèrement sur la tôle 12 jusu'à ce que la gâchette 19 se soit engagée dans le trou 20, ee qui a également pour effet de comprimer le ressort 23.
Il est entendu que le couvercle 10 et le joint 24 ont été placés préalablement à leur bonne place sur le dispositif.
