    "Procédé   de traitement de lait et de matières analogues et installation pour la mise en oeuvre de ce procédé." 
La présente demande de brevet a pour but de mettre en évidence quelques caractéristiques nouvelles de l'objet du brevet principal et de préciser' davantage quelques autres caractéristiques de ce même objet. 



   L'invention a essentiellement pour but de diminuer et de stabiliser le nombre de germes contenus dans le liquide traité suivant le procédé ou dans l'installation selon 1' invention. 



   L'invention concerne en premier lieu un procédé de traitement de lait et de liquides analogues suivant le quel on pasteurise ce liquide dans lequel on injecte en outre de l'oxygène.

   Dans le but d'obtenir l'avantage décrit ci-dessus, on in- troduit ce liquide dans une chambre se trouvant en dehors des appareils de pasteurisation, chambre dans la quelle on injecte   l'oxygène.   



   Dans une forme de réalisation avantageuse du procédé selon l'invention, on chauffe l'oxygène avant de l'injecter dans la chambre susdite. 



   Dans une autre forme de réalisation, qui fait également usage d'oxygène chauffé, ce dernier est introduit sous forme d'air. 



   L'invention concerne également une installation pour la mise en oeuvre du procédé de traitement de lait et de liquides analogues. Selon l'invention, une partie au moins de la chambre susdite présente des moyens qui favorisent la diffusion du li- quide traité. 



   Dans une forme de réalisation avantageuse de l'installation selon l'invention, les moyens précités sont constitués de petits corps, de préférence en verre. 



   Dans une forme de réalisation préférée, l'installation selon l'invention comporte un moyen pour chauffer l'air à intro- duire dans la chambre susdite. 



   D'autres détails et particularités de l'invention ressorti- ront de la description d'un procédé de traitement de lait et de matières analogues et d'une installation pour la mise en oeuvre de ce procédé selon l'invention, donnée ci-après à titre d' exemple non limitatif et avec référence aux dessins ci-annexés. 



   La figure 1 est une vue   schémati que   en coupe d'une instal- lation selon l'invention. 



   La figure 2 est une vue en coupe d'une partie de l'instal- tation selon la figure 1. 



   La figure 3 est un diagramme du nombre de germes contenus dans le lait en fonction du temps qui s'est écoulé depuis le traitement de ce lait.

   La figure 4 est un diagramme analogue à celui de la figure 3 mais relatif à une autre température de conservation du lait. 



   Dans les différentes figures, les mêmes notations de ré- férence désignent des éléments identiques. 



   Une pompe 20 refoule du lait d'une température d'environ 5  à 10 C. dans un récipient 1 dans lequel ce lait est chauffé. 



  A cet effet, le récipient 1 est entouré d'une conduite 3 dans laquelle circule de la vapeur. La vapeur entre dans la conduite 2 en 21 et sort de cette conduite en 22. Un tuyau 23 relie le récipient 1 à un récipient 3. A l'intérieur de ce récipient 3 se trouvent des plaques creuses 4 disposées en chicane. Dans le récipient 3, la température du lait augmente encore sous l'influence des plaques 4, à l'intérieur des-quelles circule également de la vapeur. Cette vapeur est amenée aux plaques 4 par les tuyaux 24 et est évacuée de ces plaques par les tuyaux 25. Après son passage par les récipients 1 et 3, le lait a obtenu la température requise pour le traitement, c.à.d. une température de l'ordre de 60 à 95 C.

   Tel qu'il a été décrit dans le brevet principal, le temps nécessaire pour obtenir cet- te augmentation de température n'excède pas quelques secondes. 



  Le circuit de pasteurisation est complété par le réfrigérant 5 dans lequel le lait circule dans une conduite 6 entourée d'un milieu réfrigérant quelconque   7.   Après le traitement, la tempé- rature du lait est de nouveau de l'ordre de +   5 u.   Enfin, le lait est recueilli dans un récipient 26. 



   Comme il a déjà été décrit dans le brevet principal, le circuit de pasteurisation est interrompu et le lait provenant du récipient 3 est introduit dans une chambre 8. La conduite d'amenée dans cette chambre 8 est reliée au récipient 3, tandis que la conduite d'évacuation de cette chambre est reliée, par exemple par l'intermédiaire d'une pompe 9, au   réfrigérant

 pression, par exemple de l'ordre de 180 kg./-cm2, est reliée à un gicleur 10 qui débouche dans la partie inférieure de la chambre 8.

Le gicleur/comporte notamment un petit tuyau 27, un filtre métallique 28 et deux soupapes. Le tuyau 27 est vissé dans le corps 29 du gicleur. Une des soupapes est constituée par une bille 30 et un ressort à boudin 31. Ce ressort qui, d'une part, vient buter contre la bille est, d'autre part, en contact avec une pièce 32 qui se visse dans un creux qui est prévu à l'in- térieur du corps 29. La pièce 32 présente un canal central 33; ce canal communique avec l'intérieur du corps par les orifices   34.   La partie supérieure de la pièce 32 est entourée par une membrane en caoutchouc 35. Il est à remarquer que les deux sou- papes se trouvant dans le corps du gicleur permettent un passa- ge ascendant mais nullement un passage descendant.

   L'oxygène se trouvant dans la bonbonne 11 pourra entrer dans la chambre 8, mais le lait qui se trouve dans la chambre 8 ne pourra nullement entrer dans le gicleur ou restera tout au moins au-dessus des soupapes. Le gicleur est complété par l'élément 36 qui présente également un canal. 



   Si pour l'une ou l'autre raison au cours du fonctionnement de l'installation, le gicleur doit être remplacé , le clapet   37   obturera l'orifice 38 dans le quel est vissé le corps du gicleur 
Le tuyau 27 est relié à la bonbonne 11 par un tuyau 39. 



  Dans ce dernier tuyau 39, il est intercalé un moyen pour chauf- fer et stériliser l'oxygène. Ce moyen comporte notamment un tube enroulé en spirale. Ce tube 40 entoure une résistance électrique 41 et est entouré par une matière isolante 50. Il est bien entendu que ce moyen pour chauffer l'oxygène peut être remplacé par n'importe quel autre moyen. L'oxygène sort du tube 40 à une température de l'ordre de 180 C; toutefois, en entrant dans la chambre 8 l'oxygène, sous l'influence de

 la diffusion, subit un refroidissement jusque une température de 50 à 70 . Le fait que l'oxygène entre dans la chambre 8 à une température de l'ordre de 50 à 70  et que cet- oxygène pré- sente un volume sensiblement plus grand que le volume de 1' oxygène non chauffé, permet d'économiser de l'oxygène.

   Il est en outre à remarquer que l'oxygène, qui a été chauffé   jusqu' à   une température de 180 , est devenu complètement stérile. 



   Il est même à remarquer que l'oxygène pourrait être rem- placé par de l'air pur qui pourrait être refoulé dans le gicleur par une pompe. La bonbonne 11 serait alors éliminée. L'emploi d'air pur ne présente plus d'inconvénient parce que cet air serait devenu stérile par le chauffage jusqu'à une température de   180  C.   



   Comme il a été décrit dans le brevet principal, l'injecteur 10, en l'occurrence formé par le gicleur, débouche dans un coude de la conduite d'amenée dans la chambre 8, de sorte qu'on obtient un mélange intime de lait et d'oxygène grâce aux turbu- lences qui se présentent toujours dans un coude. 



   La conduite d'amenée dans la chambre 8 débouche dans le fond de celle-ci, tandis que la sortie 14 pour le lait se pré- sente de préférence aux 3/4 de la hauteur de la chambre. 



   Au-dessus du gicleur 10 il est prévu une grille conique 43. Sur cette grille conique 42   ainsi/que   sur le fond conique 43, il est prévu des billes en verre 51. Ces petites billes consti- tuent des moyens qui favorisent la diffusion. Il est cependant bien entendu que les petites billes peuvent être remplacées par d'autres moyens de diffusion, tels que des chicanes, des gril- les,etc. 



   La partie inférieure de la chambre 8 forme au fond une chambre de diffusion, tandis que la partie supérieure de la chambre forme une chambre de   turbulence.   



   La grille 42 est fixée à une barre 44 qui comporte à l'ex-

 trémité opposée à la grille un oeillet 45. Il est en outre prévu un thermomètre 46 qui mesure la température existant dans la chambre 8 et une soupape réglable   47.   



   Le lait traité au moyen de l'installation décrite ci-dessus présente des   caractéristi ques   qui dépassent sensiblement les caractéristiques du lait traité suivant d'autres procédés. 



   Pour qu'on puisse comparer le lait pasteurisé et le lait traité selon le procédé suivant l'invention, il a été représenté aux figures 3 et 4 deux courbes d'une part relatives à du lait pasteurisé ( courbes 48) et d'autre part relatives à du lait traité selon l'invention (courbes 49). 



   La figure 3 concerne du lait conservé à une température de   10 C,   tandis que la figure 4 concerne du lait conservé à une température de   20    2 C. Les courbes représentent le nombre de germes contenus dans une quantité déterminée de lait en fonction du temps qui s'est écoulé depuis le traitement. 



   On admet généralement   qu'un   lait qui contient 30000 germes banaux par cm3 est un lait de première qualité et qu'un lait qui contient 100000 germes banaux par cm3 est un lait de seconde qualité . 



   On constate que pour la courbe relative à 20 C, le lait traité selon l'invention reste un lait de première qualité pen- dant environ 36 heures, tandis que sous les mêmes conditions le lait pasteurisé restera un lait de première qualité pendant 6 heures. Il y a donc une différence de 30 heures. Pour une conservation à une température de 10 , il y a une différence de 48 heures. 



   Si la chambre 8 présente un volume d'environ 2000 litres, on peut régler la vitesse du passage du lait à travers l'instal- lation selon l'invention de manière telle que ce lait reste environ pendant une demi-heure dans cette chambre 8. La tempé- rature de la pasteurisation pourra donc être de l'ordre de 73

 ou même de 63 , ce qui correspond donc à une pasteurisation dite "basse" et continue. 



   Il est également possible de prévoir une chambre du genre de la chambre 8 décrite ci-dessus, soit après les appareils de pasteurisation, soit avant les appareils de pasteurisation. 



  La chambre peut par exemple être installée après les appareils de pasteurisation dans le but d'affiner le goût du lait. On peut également placer la chambre après la pompe 20 et avant le récipient 1. Dans ce dernier cas, de l'oxygène est injecté dans le lait cru. Il est à conseiller de réfrigérer au maximum ce lait cru pour lui donner un plus grand pouvoir d'absorption d' oxygène. 



   Il est à remarquer que le fait,que le lait traité selon le procédé ou dans l'installation suivant l'invention présente un nombre de germes sensiblement inférieur au nombre obtenu selon les procédés connus, donne lieu à de multiples avantages. 



   Le lait traité selon l'invention se conservera pendant un temps beaucoup plus grand et présente de multiples avantages du point de vue hygiénique. 



   Il est à remarquer que l'invention n'est nullement limitée aux formes de réalisation décrites ci-dessus et que bien des modifications peuvent y être apportées, notamment quant à la forme, à la constitution, au nombre et à la disposition des éléments intervenant dans sa réalisation, sans sortir du cadre de la présente demande de brevet, à condition que ces change- ments soient compatibles avec l'esprit des revendications énoncées ci-après. 



   En effet, quoique le procédé et l'installation convien- également nent surtout pour le traitement du lait, ils peuvent/être appliqués dans d'autres industries, notamment dans les indus- tries qui traitent des matières fermentescibles.

The aim of the present patent application is to demonstrate some new characteristics of the subject matter of the main patent and to specify further certain other characteristics of this same subject.



   The object of the invention is essentially to reduce and stabilize the number of germs contained in the liquid treated according to the process or in the installation according to the invention.



   The invention relates firstly to a process for treating milk and similar liquids according to which this liquid is pasteurized, in which oxygen is additionally injected.

   In order to obtain the advantage described above, this liquid is introduced into a chamber located outside the pasteurization apparatus, a chamber into which the oxygen is injected.



   In an advantageous embodiment of the process according to the invention, the oxygen is heated before it is injected into the aforesaid chamber.



   In another embodiment, which also makes use of heated oxygen, the latter is introduced in the form of air.



   The invention also relates to an installation for carrying out the process for treating milk and similar liquids. According to the invention, at least part of the aforementioned chamber has means which promote the diffusion of the treated liquid.



   In an advantageous embodiment of the installation according to the invention, the aforementioned means consist of small bodies, preferably of glass.



   In a preferred embodiment, the installation according to the invention comprises a means for heating the air to be introduced into the aforesaid chamber.



   Other details and features of the invention will emerge from the description of a process for treating milk and similar materials and of an installation for implementing this process according to the invention, given below. by way of non-limiting example and with reference to the accompanying drawings.



   Figure 1 is a schematic sectional view of an installation according to the invention.



   Figure 2 is a sectional view of part of the installation according to Figure 1.



   FIG. 3 is a diagram of the number of germs contained in the milk as a function of the time which has elapsed since the treatment of this milk.

   FIG. 4 is a diagram similar to that of FIG. 3 but relating to another storage temperature for milk.



   In the various figures, the same reference notations designate identical elements.



   A pump 20 delivers milk at a temperature of about 5 to 10 C. into a container 1 in which this milk is heated.



  For this purpose, the receptacle 1 is surrounded by a pipe 3 in which steam circulates. The steam enters the pipe 2 at 21 and leaves this pipe at 22. A pipe 23 connects the receptacle 1 to a receptacle 3. Inside this receptacle 3 are hollow plates 4 arranged in a baffle. In the container 3, the temperature of the milk increases further under the influence of the plates 4, inside which also circulates steam. This steam is brought to the plates 4 by the pipes 24 and is evacuated from these plates by the pipes 25. After passing through the containers 1 and 3, the milk has obtained the temperature required for the treatment, ie. a temperature of the order of 60 to 95 C.

   As described in the main patent, the time required to achieve this increase in temperature does not exceed a few seconds.



  The pasteurization circuit is completed by the refrigerant 5 in which the milk circulates in a pipe 6 surrounded by any refrigerant medium 7. After the treatment, the temperature of the milk is again of the order of + 5 u. Finally, the milk is collected in a container 26.



   As has already been described in the main patent, the pasteurization circuit is interrupted and the milk coming from the container 3 is introduced into a chamber 8. The supply line in this chamber 8 is connected to the container 3, while the line outlet of this chamber is connected, for example by means of a pump 9, to the refrigerant

The nozzle / comprises in particular a small pipe 27, a metal filter 28 and two valves. The pipe 27 is screwed into the body 29 of the nozzle. One of the valves consists of a ball 30 and a coil spring 31. This spring which, on the one hand, abuts against the ball, is, on the other hand, in contact with a part 32 which is screwed into a hollow which is provided inside the body 29. The part 32 has a central channel 33; this channel communicates with the interior of the body through the orifices 34. The upper part of the part 32 is surrounded by a rubber membrane 35. It should be noted that the two valves located in the body of the nozzle allow a passage - ascending age but not a descending passage.

   The oxygen in the cylinder 11 will be able to enter the chamber 8, but the milk in the chamber 8 will not be able to enter the nozzle or will at least remain above the valves. The nozzle is completed by the element 36 which also has a channel.



   If for one or another reason during the operation of the installation, the nozzle must be replaced, the valve 37 will close the orifice 38 in which the body of the nozzle is screwed.
The pipe 27 is connected to the cylinder 11 by a pipe 39.



  In this last pipe 39, there is interposed a means for heating and sterilizing the oxygen. This means comprises in particular a tube wound in a spiral. This tube 40 surrounds an electrical resistance 41 and is surrounded by an insulating material 50. It is understood that this means for heating the oxygen can be replaced by any other means. The oxygen leaves the tube 40 at a temperature of the order of 180 C; however, on entering chamber 8 oxygen, under the influence of

   It is further noted that the oxygen, which has been heated to a temperature of 180, has become completely sterile.



   It should even be noted that the oxygen could be replaced by pure air which could be pumped back into the nozzle by a pump. The cylinder 11 would then be eliminated. The use of clean air no longer presents a disadvantage because this air would have become sterile by heating to a temperature of 180 C.



   As described in the main patent, the injector 10, in this case formed by the nozzle, opens into an elbow of the supply line in chamber 8, so that an intimate mixture of milk is obtained. and oxygen thanks to the turbulence that always occurs in an elbow.



   The supply pipe into chamber 8 opens out at the bottom of the latter, while the outlet 14 for milk is preferably at 3/4 of the height of the chamber.



   A conical grid 43 is provided above the nozzle 10. On this conical grid 42 as well as on the conical bottom 43, glass balls 51 are provided. These small balls constitute means which promote diffusion. It is, however, understood that the small balls can be replaced by other means of diffusion, such as baffles, grills, etc.



   The lower part of the chamber 8 at the bottom forms a diffusion chamber, while the upper part of the chamber forms a turbulence chamber.



   The grid 42 is fixed to a bar 44 which comprises at the ex-

 end opposite the grid an eyelet 45. There is also provided a thermometer 46 which measures the temperature existing in the chamber 8 and an adjustable valve 47.



   Milk treated by means of the plant described above exhibits characteristics which substantially exceed the characteristics of milk treated by other methods.



   So that one can compare the pasteurized milk and the milk treated according to the process according to the invention, it has been shown in Figures 3 and 4 two curves on the one hand relating to pasteurized milk (curves 48) and on the other hand relating to milk treated according to the invention (curves 49).



   Figure 3 relates to milk stored at a temperature of 10 C, while Figure 4 relates to milk stored at a temperature of 20 2 C. The curves represent the number of germs contained in a determined quantity of milk as a function of the time which has elapsed since treatment.



   It is generally accepted that a milk which contains 30,000 banal germs per cm3 is a premium milk and that a milk which contains 100,000 banal germs per cm3 is a second quality milk.



   It can be seen that for the curve relating to 20 ° C., the milk treated according to the invention remains a first quality milk for approximately 36 hours, while under the same conditions the pasteurized milk will remain a first quality milk for 6 hours. So there is a 30 hour difference. For storage at a temperature of 10, there is a difference of 48 hours.



   If the chamber 8 has a volume of about 2000 liters, the speed of the passage of the milk through the installation according to the invention can be adjusted in such a way that this milk remains for approximately half an hour in this chamber 8. The temperature of the pasteurization can therefore be of the order of 73

 or even 63, which therefore corresponds to a so-called "low" and continuous pasteurization.



   It is also possible to provide a chamber of the type of chamber 8 described above, either after the pasteurization devices or before the pasteurization devices.



  The chamber can for example be installed after the pasteurization devices in order to refine the taste of the milk. The chamber can also be placed after the pump 20 and before the container 1. In the latter case, oxygen is injected into the raw milk. It is advisable to refrigerate this raw milk as much as possible to give it greater capacity for oxygen absorption.



   It should be noted that the fact that the milk treated according to the process or in the installation according to the invention has a number of germs which is appreciably lower than the number obtained according to the known processes, gives rise to multiple advantages.



   The milk treated according to the invention will keep for a much longer time and has multiple advantages from a hygienic point of view.



   It should be noted that the invention is in no way limited to the embodiments described above and that many modifications can be made thereto, in particular as regards the form, the constitution, the number and the arrangement of the elements involved. in its implementation, without departing from the scope of the present patent application, provided that these changes are compatible with the spirit of the claims set out below.



   In fact, although the process and the installation are also suitable above all for the treatment of milk, they can be applied in other industries, in particular in industries which process fermentable materials.
