Abstract
La phase de salaison est réalisée à l'intérieur d'un dispositif rotatif soumis à une température comprise entre - 1degré C et + 5 degrés C et à une pression de vide maximale, durant une période de temps comprise entre 48 et 72 heures, au cours de laquelle le mélange de salaison en question pénètre dans la masse musculaire; avec la particularité qui consiste en ce que le dispositif rotatif en question tourne continuellement à une vitesse maximale de 10 tours par minute, le procédé consistant en outre à ajouter au mélange de salaison des souches de bactéries dotées d'une activité lipolytique très élevée.
