Abstract

Procédé de prévision de la qualité de la viande et de sélection sur la base de la qualité de la viande en utilisant la détermination del'activité fibrinolytique. Selon le procédé de l'invention, on mesure l'activité fibrinolytique sur du sang frais prélève sur le bétail, on en détermine le pourcentrage de lyse et on poursuit ensuite l'élévage des animaux qui présentent un pourcentage de lyse inférieur à une valeur de seuil, fonction de l'espèce et de la race de l'animal, tandis que l'on exclut de l'élévage les animaux qui présentent un pourcentage de lyse supérieur à cette valeur de seuil, immédiatement ou progressivement.
