Abstract

"COLáGENO". A presente invenção refere-se a produtos de colágeno, métodos para a sua produção e a um teste para a avaliação do teor de colágeno nativo de uma solução de proteína. Produtos de colágeno em particular são extraídos da pele de peixe de água fria. Os produtos de colágeno compreendem uma alta proporção de colágeno nativo e são adequados para uso como agentes de refinamento nas indústrias de bebidas fermentadas e vinho.
