Abstract

"PROCESSO PARA A PRODUçãO INDUSTRIAL DE MASSA ACONDICIONADA E PARTìCULAS DE MASSA ESTERILIZADAS". A presente invenção refere-se a um método para a produção industrial de massa que compreende 35% a 70% de semolina durum, 0,2% a 1,0% de alginato e 25% a 60% de água. Os ingredientes são misturados e formados em pedaços ou cordões e cozidos ao se colocar os pedaços em contato com água quente ou vapor, e em seguida os pedaços são tratados com uma solução de cloreto de cálcio e colocados em um recipiente no qual eles são esterilizados.
