Abstract

"FERMENTAçãO DE áCIDO LáCTICO EM BAIXO PH" é proporcionado um processo para a produção de ácido láctico que inclui a incubação de microorganismos ácido-tolerantes produtores de lactato, tais como as bactérias homolácticas ácido-tolerantes, em meio nutriente para produzir uma calda de fermentação com altos níveis de ácido láctico livre.
