Abstract

"PROCESSO PARA FABRICAçãO DE SALSICHA DEFUMADA / COZIDA" A presente invenção descreve um processo produtivo para salsichas defumadas / cozidas caracterizado por tempos de processamento mais curtos e rendimento mais alto. Uma composição de carne contendo um aromatizante de fumaça é co-extrudada com um material formador de invólucro. O material formador de invólucro é endurecido, depois do que o cordão de salsichas é pregueado / cortado e as salsichas são tratadas termicamente em um período de 15 minutos em uma correia transportadora horizontal. O tratamento térmico consiste de uma fase "e aquecimento a seco"antes de uma fase de acabamento.
