Abstract

"AMIDOS EM FORMA DE GEL A BASE DE SAGU". Amidos de gelificação baseados em sagu e uso dos mesmos. Tais amidos modificados exibem propriedades de gelificação excepcionalmente rápidas, elevadas resistências de gel e excepcional elasticidade. Essas propriedades permitem tempos de processamento significativamente reduzidos, incluindo tempos reduzidos de manutenção. Ainda, a maior resistência de gel permite níveis reduzidos de amido sem perda da integridade de resistência de gel ou textura do produto final. Os amidos de gelificação instantânea são particularmente úteis em sistemas alimentícios do tipo que se gelificam quando de descanso, tais como recheios de torta e cremes, pudins, pastas e geléias.
