Abstract
"MéTODO DE FABRICAçãO DE PRODUTOS DE MASSA VIA INJEçãO DE GáS E MISTURA POR ACELERAçãO". São fornecidos métodos para fabricar um produto de massa extrudada não-cozida, consistindo na injeção de gás em uma massa pressurizada antes da extrusão de uma composição de massa de amido pré-gelatinizado, consistindo em pelo menos aproximadamente 75% de amilopectina, farinha, agente de fermentação e água por meio de um molde sob determinadas condições para que a composição da massa não exceda 140<198>F durante todo o processo de extrusão. O produto de massa resultante, quando cozido, apresenta um volume específico panificado superior a 2,5 cc/g. Os produtos deste processo, incluindo produtos recheados, também são fornecidos. Também são fornecidos métodos para injetar gás na massa para obter extrusão aprimorada.
