Abstract

"PROCESSO PARA CONCENTRAR SUCO DE LEGUME OU SUCO DE FRUTA, E, USO DO PRODUTO". A invenção refere-se a um processo para concentrar suco de legume ou suco de fruta, em que uma corrente de permeado e uma corrente de retido são formadas submetendo-se o suco a uma etapa de ultra-filtração e submetendo-se a corrente de permeado à concentração evaporativa. Adicionalmente, a invenção refere-se ao uso do dito suco concentrado obtenível para preparar um suco de fruta ou de legume diluindo-se o concentrado com água.
