Abstract
"COMPOSIçãO COMESTìVEL". A invenção apresenta uma composição comestível que compreende gordura e pelo menos um metal de transição, um metal divalente, ou compostos dos mesmos, e de 0,01 a 50 % em peso, com base no peso da gordura, de um emulsificante que compreende um grupo éster carboxílico unido a uma cadeia de carbono que tem três a seis átomos de carbono e um ou mais grupos hidroxila livres e compreende uma mistura de emulsificantes de glicerol esterificados e alginatos esterificados. Trinta por cento ou menos das quilocalorias na composição comestível são fornecidos pela gordura. As composições têm uma boa estabilidade e valores nutritivos.
