Abstract

"PROCESSO E EQUIPAMENTO PARA A EXTRAçãO NA TEMPERATURA AMBIENTE DE SUCO E EXTRATO DE PRODUTOS ALIMENTìCIOS". Um processo que é capaz de otimizar a eficiência da extração na temperatura ambiente de suco ou extrato das polpas alimentícias de fruta e vegetais, responsável pela consistência da mesma. Em uma primeira etapa as polpas são cortadas e amaciadas em uma primeira seção (4) da máquina, onde um primeiro rotor (5) aplica às polpas alimentícias uma pluralidade de pulsos em sucessão rápida de encontro a um estator que tem saliências na superfície interna. O produto amaciado passa então através de uma segunda seção (6), onde a separação é realizada na parte da polpa que pode ser usada (suco ou extrato), que são transportadas em um tubo escoadouro (11), das sobras das partes sólida (cascas, sementes, fibras duras), que são dispostas através de escoadouro (13). Os rotores (5, 7) não são montados em um mesmo eixo, mas em eixos diferentes (8, 18) operados pelos respectivos motores (9, 19). Ambos os motores (9, 19) são conectados operacionalmente à um dispositivo (20) que controla as respectivas velocidades de uma maneira manual, por exemplo por um variador de velocidade, ou automaticamente, responsável pelos parâmetros predeterminados de entrada, relativo à consistência do produto.
