Abstract
"ESTABILIZAçãO DE PRODUTOS à BASE DE LEITE". Produtos alimentícios derivados de laticínio compreendendo cerca de 0,01-20% de proteína de laticínio, particularmente bebidas, tal como misturas de leite/iogurte, bebidas à base de iogurte, bebidas de leite fermentado e refrigerantes, são descritos. Essas composições contêm uma mistura de estabilização compreendendo metal (na forma de íons, sais ou óxidos), tal como zinco ou magnésio, ou sozinho ou junto com um componente adjunto, tal como ácido ascórbico. Esses produtos de bebida não formam gostos ruins quando eles são expostos à luz do sol ou luz fluorescente.
