Abstract

"MéTODO PARA EXTERMINAR MICROORGANISMOS OU INIBIR O CRESCIMENTO DE MICROORGANISMOS EM UM PRODUTO ALIMENTìCIO EMBALADO, BEBIDA EMBALADA, E PROCESSO PARA PROVER UMA BEBIDA EMBALADA COM ENCHIMENTO A FRIO". A presente invenção é dirigida a composições e processos que utilizam um primeiro composto antimicrobiano (isto é, quitosano, ácido tânico, ou misturas dos mesmos), em combinação com um segundo composto antimicrobiano (preferivelmente benzoato, sorbato, EDTA, ou misturas dos mesmos) para inibir o crescimento de microorganismos em produtos alimentícios e especialmente em bebidas. A presente invenção e também dirigida a composições de enchimento a frio e métodos de enchimento a frio usando quitosano sozinho ou em combinação com o segundo composto antimicrobiano (preferivelmente benzoato, sorbato, EDTA, ou misturas dos mesmos), para exterminar microorganismos e/ou inibir o crescimento de microorganismos em bebidas.
