Abstract
COMPOSIçãO FLAVORIZANTE, PRODUTO, PROCESSO DE MELHORAR O FLAVOR DE UM ALIMENTO, DE UMA BEBIDA OU DE UM PRODUTO FARMACêUTICO, E, SUBSTáNCIA MODULADORA DE FLAVOR. A presente invenção em um primeiro aspecto refere-se às novas substâncias moduladoras de flavor de acordo com a fórmula (I) e/ou seus sais edíveis: R-CR(OR)-CO-NR¬4¬-Y-X (I). Foi verificado que substâncias representadas pela fórmula (I) podem ser vantajosamente usadas para conferir flavor desejável, especialmente atributos de gosto a alimentos, bebidas, e fármacos nos quais são incorporadas. Em adição as citadas substâncias são vantajosamente aplicadas em composições flavorizantes, alimentQs, bebidas e fármacos. Exemplos típicos de substâncias moduladoras de flavor de acordo com a presente invenção incluem N-lactoil-tiramina, N-gliconil-tiramina, N-lactoil-4-hidróxi-benzil-amina, N-lactoil-vanilil-amina e N-lactoil-dopamina.
