Abstract

PROCESSO DE PASTEURIZAçãO DE OVOS EM UM FORNO. Essa invenção se refere à pasteurização de ovos com casca (10) que inclui um estágio de elevação de Temperatura 16, elevando a temperatura do albúmen de um ovo predominantemente por meio de radiação de microonda para uma temperatura entre 57<198>C e 60<198>C, a temperatura de albúmen sendo elevada em uma taxa que reduz ao menos uma vez durante o tempo. Simultaneamente, no estágio de elevação de temperatura (16), a temperatura de uma superfície externa do ovo é elevada predominantemente por meio de uma irradiação ou condução de calor externo para uma temperatura entre 57<198>C e 70<198>C, ou alternativamente, ou adicionalmente, a temperatura de superfície externa de ovo é deixada elevar para uma temperatura entre 57<198> e 70<198> como resultado da radiação de microonda pela inibição de perda de calor do ovo.
