Abstract
"EMULSãO ACIDIFICADA COMESTìVEL EM óLEO-E-áGUA E PROCESSO PARA O PREPARO DE UMA EMULSãO". A pesente invenção refere-se a uma emulsão comestível óleo-em-água acidificada com um pH de 3,5 a 6, que compreende proteínas e de 1 a 40 % em peso de uma gordura compreende de 20 a 100 % em peso de uma composição de gordura vegetal em gordura totais, e em que a composição compreende de 4 a 15 % em volume de um gás, em que o diâmetro médio das bolhas de gás está no intervalo de 50 a 500 <109>m.
