CEPA NATURAL DE STREPTOCOCCUS THERMOPHILUS AMI DEFICIENTE COM PóS-ACIDIFICAçãO REDUZIDA, E SUAS VARIANTES NATURAIS AMI DEFICIENTES, PROCESSO DE PREPARAçãO DE UM PRODUTO ALIMENTICIO FERMENTADO, PRODUTO ALIMENTICIO FERMENTADO, E, UTILIZAçãO DE PELO MENOS UMA CEPA. A presente invenção refere-se a cepas naturais de Streptococcus thermophilus AMI deficientes com pós-acidificação reduzida. A invenção visa igualmente a utilização destas cepas para preparar os produtos alimentícios fermentados, assim como aos próprios produtos alimentícios fermentados.
