Abstract
CONFEITO AERADO CONGELADO. A presente invenção refere-se a um confeito aerado congelado que possui um aumento de volume de pelo menos 40 % e um componente de gordura em uma quantidade de 2 a 20 % (em peso do confeito aerado congelado), em que dito componente de gordura compreende triglicerídeos de ácidos graxos em que não mais que 55 % (em peso de ácidos graxos) dos ácidos graxos nos triglicerideos são saturados, menos que 8 % (em peso de triglicerideos) dos triglicerídeos são triglicerideos SSS de cadeia longa; caracterizado pela proporção da porcentagem de gordura que é sólida a 50 O para a porcentagem de ácidos graxos nos triglicerídeos que são saturados (em peso de ácidos graxos) ser maior que 1 e em que o componente de gordura compreende no máximo 60 % (em peso) de manteiga de cacau e óleo de karité.
