Abstract
MéTODO PARA SOLIDIFICAR SOLUçõES DE AçúCAR OBTIDAS A PARTIR DE UVAS E PROCESSO APLICADOS DE BOLOR, BOLOR CORRIGIDO CONCENTRADO, SUCO CORRIGIDO CONCENTRADO E PRODUTOS DE TRANSFORMAçãO DE ORIGEM VEGETAL E SEUS DERIVADOS. A partir do processamento de uva que também pode ser usado para a produção de bolor corrigido concentrado (CPN) é caracterizado pelo fato de que a etapa de solidificação é realizada por conduzir a solução de açúcar a uma concentração de açúcar que é adequada para a solidificação de seus componentes capazes de serem solidificados a partir de 50% por peso de açúcares para o valor máximo da concentração viável; um produto de açúcar solidificado é obtido podendo, também, ser separado a partir de seus componentes não solidificados e oferece um número de vantagens referente à embalagem e uso, bem como armazenamento e transporte.
