Abstract
"MéTODO PARA PREPARAR MATERIAL DE PROTEìNA DO SORO DE LEITE DESFLAVORIZADO, E, PRODUTO ALIMENTìCIO CONTENDO SORO DE LEITE". Materiais de proteína do soro de leite tal como soro de leite de processos de produção de queijo, concentrados de proteina do soro de leite, e isolados de proteína do soro de leite, são desflavorizados ajustando o pH de uma composição aquosa de tais materiais de proteína do soro de leite para cerca de 8, O a cerca de 12 usando eletrodiálise por membrana para solubilizar as proteínas do soro de leite e para liberar os compostos flavorizantes e, portanto, passando a composição com pH ajustado para uma membrana de ultrafiltração tendo um corte de retenção de molécula até cerca de 50.000 daltons sob condições as quais os compostos flavorizantes passam através da membrana, deixando o material de proteina do soro de leite retido com flavor melhorado.
