Abstract
MéTODOS PARA A PRODUçãO DE UM PRODUTO ALIMENTìCIO PICADO DE GRãO INTEGRAL, PARA A PRODUçãO DE UM PETISCO DE MILHO PICADO DE GRãO INTEGRAL E PARA MELHORAR A CAPACIDADE DE PICAR DAS PARTìCULAS DE GRãO DE CEREAL INTEGRAL RETROGRADADAS PARA A PRODUçãO DE UM PRODUTO ALIMENTìCIO PICADO DE GRãO INTEGRAL. Produtos de grãos integrais picados, tais como cereais prontos para consumo, e petiscos doces e aromáticos, tais como salgaginhos de milho picados de grão integral, são continuamente produzidos mediante a peletização de aglomerados de partículas de grãos de cereais integrais temperados cozidos. Os grãos integrais cozidos, tais como grãos contendo milho e outros sem glútem ou baixo teor de glútem, possuem ma tendência de se tornarem sólidos e semelhantes a borracha após o cozimento durante o processo de esfriamento e temperamento. A peletização resulta na produção de glóbulos de grão integral tendo uma textura flexível e macia, que são desfibráveis em folhas semelhantes a rede contínuas em uma base de produção de massa. A peletização pode estar em uma pressão de cerca de 200 psig (1,4 MPa man.) a cerca de 600 psig (4,1 MPa man.), preferívelmente de cerca de 400 psig (2,7 MPa man.) a cerca de 500 psig (3,4 MPa man.). A temperatura de peletização pode ser controlada para fornecer uma temperatura de glóbulo de cerca de 80<198>F (26,6<198>C) a cerca de 135<198>F (57,2<198>C), preferivelmente de cerca de 90<198>F (32,2<198>C) a cerca de 110<198>F (43,3<198>C), após a saída do peletizador.
