Abstract
"MéTODOS PARA PRODUZIR PRODUTOS ALIMENTìCIOS DESFIBRADOS DE GRãOS INTEGRAIS E APERITIVO DESFIBRADO DE MILHO DE GRãOS INTEGRAIS, E PARA MELHORAR O DESFIBRAMENTO DE PARTìCULAS DE GRãOS DE CEREAIS INTEGRAIS". Produtos desfibrados de grãos integrais, tais como cereais prontos para consumo, e aperitivos doces e saborosos, tais como lascas desfibradas de grãos de milho integrais, são produzidos continuamente pela pelotização de aglomerados de partículas de grãos de cereais integrais, cozidas, temperadas. Os grãos integrais cozidos, tais como de milho e outros grãos sem glúten ou contendo baixo teor de glúten, possuem uma tendência a se tornarem duros e borrachudos após o cozimento, durante o processo de resfriamento e temperamento. A pelotização resulta na produção de pelotas de grãos integrais que possuem uma textura mole, flexível, que são desfibradas em folhas contínuas do tipo rede em uma base de produção em massa. A pelotização pode ser a uma pressão de 1379 kPa man a 4137 kPa man, sendo de preferência de 2758 kPa man a cerca de 3447 kPa man.
