Abstract
MASSA DE MILHO INSTANTáNEA. A presente invenção refere-se a um processo para produção de massa de milho fresca, farinha nixtamalizada e produtos derivados. A invenção é um novo processo para produção de massa de milho (massa) a ser usada na produção de tortilhas, tortilha chips fritas ou cozidas, tostadas ou chips de milho. O novo processo produz massa de milho diretamente de matérias-primas, sem as etapas de cozimento e maceração tradicionais. Ele utiliza uma série de etapas de processamento incluindo moagem, combinação, hidratação, cozimento e resfriamento contínuo para parar a gelatinização. O novo processo utiliza muito pouca água e não produz água residual.
