Abstract

MéTODO PARA PREPARAR BARRAS DE CEREAIS. Um método de produção de uma barra de cereal é proporcionado no qual o cereal compreende uma mistura de cereais incluindo pedaços de cereais prontos-para-comer (RTE) unidos juntos com um aglutinante, onde o cereal e o aglutinante juntos formam uma matriz de cereais que é aquecida por um tempo e uma temperatura para reduzir a atividade aquosa de sua porção externa ao mesmo tempo mantendo uma porção interna da matriz de cereais em uma segunda atividade aquosa mais alta. O método proporciona barras de cereais requerendo menos força compressiva para ser transformada em uma estrutura auto-sustentável coesiva na provisão de uma barra de cereais de densidade reduzida mascável com vida de prateleira melhorada.
