Abstract

MéTODO PARA REDUZIR SIGNIFICANTEMENTE OS NìVEIS DE ADSTRINGêNCIA E AMARGOR EM COMPOSIçõES DE POLIFENOL, E, COMPOSIçãO. São apresentadas composições de polifenol micro-encapsuladas adequadas para uso em produtos alimentícios e de bebidas. A microeneapsulação reduz significativamente a adstringência e/ou a amargor das composições de polifenol e protege as composições de polifenol contra oxidação, interações de ingredientes, degradação enzimática e semelhantes, ao mesmo tempo mantendo a biodisponibilidade gastrintestinal dentro do sistema digestivo.
