Abstract

La présente invention a pour objet la préparation de produits alimentaires fonctionnels contenant des bactéries vivantes, préparés par inoculation et fermentation de farines ou d'extraits de céréales. Les produits obtenus présentent des bénéfices pour la nutrition et la santé. Parmi ces produits, on retrouve des yogourts (classiques ou congelés), des flans, des laits et des combinaisons sèches céréales/bactéries probiotiques. Divulgation de compositions contenant des farines de céréales et/ou du son avec du bêta-glucane qui protègent les cultures et les produits contenant des bifidobactéries de la compétition avec lactobacilli. Cette protection s'étend lors du processus de fabrication en plus du stockage du produit et permet de s'assurer que les doses fonctionelles de bactéries probiotiques sont dispensées à l'utilisateur final. Ces compositions contiennent des fibres solubles provenant d'avoine, de préférence à des niveaux suffisants pour se conformer aux exigences de la FDA des É.-U. pour pouvoir faire une revendication de santé.
