Abstract

L'invention concerne un procédé de nanofiltration, permettant d'obtenir du sucrose à partir d'un sirop d'alimentation, tel que des mélasses, qui comprend du sucrose et au moins environ 2 % en poids de sucres invertis (sur la base de solides secs). Le perméat de nanofiltration comprend des sucres invertis qui passent de l'alimentation vers la membrane de nanofiltration, et comprend également, de préférence, des cendres provenant de l'alimentation. Le rétentat de nanofiltration possède une concentration plus élevée en sucrose et une concentration plus faible en sucres invertis que le sirop d'alimentation. Le sucrose peut ensuite être cristallisé à partir du rétentat de nanofiltration. La réduction du contenu inverti dans le sirop facilite la cristallisation et donc la récupération du sucrose.
